Confession #27 – My love for Pinterest is no secret. I’ve said it before- how in the world did I function before it? Especially at 3am when my youngest is up, for no particular reason, and I can’t get back to sleep.
I sometimes see other momma friends pinning away in the middle of the night. You know who you are.
Anyway, I get SO disappointed when I try something that looks amazing on Pinterest, but it just doesn’t deliver.
Like the casserole I made this week. It looked very promising and simple, but I just didn’t love it.
The recipe called for grated cauliflower, and I wasted almost a whole head of it. Total bummer.
I did reserve a small amount and decided to try making cauliflower rice, something else I have seen pinned many times.
OMG. Talk about a silver lining.
It was DELISH. Like, for real. And, if you are pinning this, I promise this ain’t no fail. It is yummy alone, as a side dish, or with carnitas or a burrito bowl! So many options, you better get to it!
I only wish I had more, and I can’t wait to make it again.
Here is the delicious, easy, and healthy cauliflower rice recipe. Enjoy!
- Cauliflower, grated or shredded
- 1-2 tsp of olive oil
- 1-2 cloves of garlic, minced
- juice of a lime
- sea salt
- To grate the cauliflower, carefully use a hand grater, or simply use a food processor.
- Heat your olive oil over med-low heat and sauté the minced garlic. Add the cauliflower and stir fry until it starts to turn golden brown.
- Turn off heat and add chopped cilantro and fresh lime juice.
- Sprinkle with sea salt.
