Well hello there, friends…
I’m trying to play it cool right now, but I am seriously super excited to be writing my first blog post since my site re-design.
For those of you who have stuck with me for the past two years, despite a less than awesome recipe index and a hard to find search bar, I love you.
And, because I love you, I tried to make this updated site way easier for you because meal planning takes such a crazy long time, doesn’t it? I hope all of that gets a bit easier and quicker for you now!
Anyway, I missed a week of meal planning last week due to the new site, but here’s a new group of dinners for the week ahead! These are some of the lesser known recipes on my blog, but they are still seriously delicious. Enjoy!
Monday: 21 Day Fix Easy Caprese Chicken {Crock Pot or Instant Pot}
Grocery List:
- yellow or red onion
- garlic
- 1 lb. boneless, skinless chicken breasts
- 3 1/2 cups of cherry or grape tomatoes
- balsamic vinegar
- extra virgin olive oil
- crushed red pepper (optional)
- sea salt and fresh ground pepper
- fresh basil
- mozzarella cheese, shredded
Tuesday: Chicken in Vodka Sauce {21 Day Fix}
Grocery List:
- turkey bacon (nitrate-free)
- garlic, minced
- salt and pepper
- olive oil
- red onion
- red pepper flakes
- 28 oz crushed tomatoes
- 1/4 cup plus 1 T of vodka
- plain Greek yogurt
- Parmesan cheese
- fresh basil
- oregano flakes
- 2 boneless chicken breasts, grilled
- Pasta or Zoodles
Wednesday: Crock Pot Pork Carnitas {21 Day Fix}
Grocery List:
- 2-3lb pork shoulder
- low sodium chicken broth
- garlic
- olive oil
- optional – 1-2 tsp of Chipotle Peppers in Adobe Sauce
- Salt-free adobo spice mix:
- 1tbsp garlic powder
- 1tbsp onion powder
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- 1/2 tsp chipotle chili powder
- 1/2 tsp oregano
Thursday: 21 Day Fix Greek Spaghetti Squash Boats {Gluten-free}
Groceries:
- 1 medium spaghetti squash
- baby spinach
- cherry tomatoes
- 2 small cucumbers
- red onion
- black olives
- diced grilled chicken
- feta cheese
- For the dressing
- plain Greek yogurt
- garlic
- 1 lemon
- chopped fresh dill
- salt and pepper
Friday: Pork Enchiladas Flatbread Pizza {21 Day Fix}
Groceries:
- 1 can of tomato sauce
- dried oregano
- ground cumin
- garlic powder
- onion powder
- chili powder
- whole wheat wrap or flatbread
- Shredded pork or chicken (use your leftover carnitas!)
- green pepper
- red onion
- shredded cheddar
