I know a lot of you do Meatless Mondays…
I’m totally down. My husband, not so much.
But he would definitely do More Meat Mondays, whenever that becomes a thing.
Until then, we compromise.
Like tonight. I made this easy dish for us to split.
I topped mine with a delicious dollop of Ricotta cheese. And I topped his with leftover sliced steak. Done and done.
You could top this dish with anything, really – fish, shrimp, grilled portabellas…hmmm…
I like where I’m going with that last one.
Zoodles with Tomatoes, Basil and Spinach
2tsp of olive oil
2 cloves of diced garlic
1 pint of grape or cherry tomatoes
1-2 zucchinis for zoodles
1/2 cup chicken broth
Small handful of basil
Two handfuls of spinach (I’m feeling super precise!)
1/3 cup Parmesan cheese
2 GREEN 1/2 RED 1/2 BLUE 1tsp per serving
1. Saute garlic and oil on low heat for 5 minutes. Be careful not to brown. Then add tomatoes! Cook until tomatoes become soft and start to burst open.
2. Add basil and spinach and cook until wilted.
3. Make zoodles – I did this right into the pan! One pot meal, yo!
4. Add chicken broth and parmesan cheese. Stir and sauté until everything is melty, warm and smelling delicious!
5. Add that Ricotta cheese.
Oh my word. Meatless Monday in just Minutes.
