Real Solutions for 2016 {New Challenge Group}

Real solutions are better than new year resolutions, because they’re realistic, reasonable, and reachable! Join the 2016 healthy living challenge here! Our goal is to get healthy and stay healthy as a way of living, not as a temporary fix.

Well, hello lovely readers! How was your holiday?

Was it yummy?

Did you eat 200 Christmas cookies? No way!  So did I!  What are the odds?

I ate at least a dozen coconut macaroon cookies. But I couldn’t stop there. I had to keep going! After I finished baking the macaroon cookies, I made gluten free chocolate chip cookies. How could I resist tasting a few?!

Oh.  And cheese.  I also ate cheese.  A lot of cheese.  #bluecontainershame

Needless to say, I am SO ready for my new challenge group to begin this January.  With another round of visitors coming tomorrow, I see more eating in my future.  And I conveniently threw out my back, so no workout for me. Getting older is awesome!

I’m praying to the Beachbody gods that my back heals in time.

Real Solutions for 2016 - A new way of healthy eating. Join the challenge!

21 Day Fix Shrimp and Zoodles

  • Yield: 4 servings

Ingredients

  • 1lb of shrimp
  • 2 large zucchinis, made into zoodles
  • 2 cloves of garlic, chopped
  • 1 cup of cherry tomatoes, cut in half
  • 1/2 cup of chicken broth
  • 1 lemon
  • crushed red pepper

Instructions

  1. Spray pan with cooking spray and sauté shrimp until pink. Season with a few shakes of crushed red pepper.
  2. Remove shrimp from pan and set aside. Deglaze pan with chicken broth and juice from half a lemon. Add garlic and simmer for 1-2 minutes.
  3. Add zoodles to pan, then top with tomatoes and shrimp. Cook on med heat for 2-3 minutes until noodles are warmed.
  4. Measure portions and serve with lemon wedges and an optional sprinkle of parm cheese.
  5. Check the time. Was that even 20 minutes?

Notes

1 GREEN, 1 RED, optional BLUE

    I want to start this challenge with you all....as I sit here eating a small piece of apple pie left over from Christmas day :-/ I love love love Beachbody and have several workout series including 21 Day Fix, but I have not been dedicated to follow the eating and workout plan since I purchased it. I love the concept and keep my containers and booklet right out on my counter. I think I needed some help with putting several recipes together using the lists of acceptable foods so I am looking forward to your help with that. I try to make good food choices and portion control. I tell myself every night when I go to bed I WILL get up an hour earlier and do a morning workout...but sadly have not. When I get home from my day job I daily plan on doing a workout before I start my second job....at-home transcription...but find I "run out of time". I am tired of my excuses. I NEED to lose weight and be a healthier me. I believe I will have more success if I am involved in a challenge group and be motivated and inspired and held accountable. Since I am home from my day job all this week (work at a school district) I am GOING to begin my morning workout routine tomorrow but I hope you can "sign me up" for your new group beginning 2016 :-) Thank you!! Looking forward to this new journey and team :-)

      Hey Deb! I can relate to SO much of what you are saying! My challenge groups are so awesome and really keep me motivated and on track...especially when I am too tired to get a workout in (which is more often than not these days!!) I will email you in a bit so we can talk more!!

    I can't exercise as much as I want or should sure to medical reasons, but I want in on the challenge. Accountability and recipes...works for me!
