Here’s another installment of Weekly Dinners for you! These are some of my favorite easy and family friendly meals – perfect for this crazy, stressful, wonderfully magical time of year.
See that – I am practicing not being stressed about the holidays, the shopping, and life in general right now…and trying to focus on what’s important.
It’s definitely a work in progress, but I am ok with that. Baby steps.
Anyway, several of these dinners can be prepped in advance like the Mexican Lasagna, Sweet Potato Chili, and the Sausage and Pepper Soup. Oh – and you could make both the chili and the soup in the crock pot if you rather. The nice thing about the Salsa Verde Pork and One Skillet Caprese Chicken is how easy they both are! And yet they are definite favorites in this house!

Freezer Friendly Meal Plan & Grocery List
Monday: Sausage and Pepper Soup
Grocery List:
- olive oil cooking spray
- 1 lb of spicy Italian turkey sausage (or sub sweet)
- 1 onion
- 2 bell peppers
- 2 cloves of garlic
- 1 (14oz) can of petite diced tomatoes
- 4 cups of low sodium organic chicken broth or stock
- fresh basil (you can sub dried)
- Parmesan cheese for topping, if desired
Tuesday: Mexican Lasagna (prep this ahead of time and either freeze or refrigerate before baking!)

- 2 bell peppers
- 1 medium onion
- 1 lb lean ground sirloin or other protein
- 2 T salt free taco seasoning
- 1 1/3 cups shredded cheddar cheese
- 3/4 cup of refried beans
- 1/4 cup of corn
- 1 can of Rotel
- olive oil cooking spray
- 8 gluten free corn tortillas, cut in half
toppings –
- cilantro
- 2/3 cup of diced avocado
- diced jalapeno
- cilantro lime yogurt sauce
Wednesday: One Skillet Caprese Chicken (Quick and Easy! Serve with zoodles, spaghetti squash, rice or pasta)
- 2 tsp extra-virgin olive oil
- olive oil cooking spray
- 1 lb. boneless skinless chicken breasts
- kosher salt
- black pepper
- 1/4 c. balsamic vinegar
- 2 cloves garlic
- 1 pint grape tomatoes
- 1/4 red onion
- 2 tbsp. shredded basil
- 2/3 cup of shredded mozzarella cheese
- 4 cups of cooked spaghetti squash (or zoodles, rice, or pasta)
Thursday: Sweet Potato and Black Bean Chili (again – awesome make ahead! Totally freezer friendly, too!)
- 4 tsp olive oil
- 1 ½ pounds of ground turkey
- 1 small or ½ large onion
- 3 cloves of garlic
- 1 can of black beans
- 1 can of fire roasted tomatoes
- 2 cups of kale
- 2 med/large sweet potatoes, diced (measure about 4 cups)
- 2+ cups of chicken stock
- 3 T salt free taco seasoning
- up to 1 T chili powder
- 1/4 tsp cayenne (optional)
- salt and pepper
- optional – maple syrup
- toppings:
- cheddar cheese
- cilantro
- chives
- avocado
Friday: Crock Pot Salsa Verde Pork (The easiest dinner ever! Serve with all your leftover toppings from the week and maybe some brown rice!)
- 1 pork tenderloin (should be enough for 4 servings)
- 1 jar of Salsa Verde (look for one without preservatives and added sugar)
- optional toppings: fresh lime, fresh salsa, avocado, cheese, cilantro, rice, cauliflower rice. Anything goes!
