Is anyone else still dragging from daylight savings?
It’s been a week, and I am still feeling it.
My son is really feeling it.
Is it just us?
Anyway, I apologize that this is kind of late…I ended up falling back to sleep around 6:30 this morning after being up since 3…and my sweet husband let me sleep.
So glorious, until I realize everything I need to do today. Including this post! But still – sleep is sleep, right?
This week of meals are really simple because, see above, and of course delicious, including Monday’s drool worthy Pasta Fagioli from my friend Stephanie’s blog, The Foodie and The Fix. and my favorite fish tacos for Fish Friday!

Monday: 21 Day Fix Pasta Fagioli
Groceries:
Tuesday: 21 Day Fix Mediterranean Salad with Tzatziki Dressing
Groceries:
- quinoa
- spinach
- cherry tomatoes
- cucumber
- diced grilled chicken
- feta cheese
- kalamata olives
- fresh mint
For the dressing
- plain Greek yogurt
- cucumber
- garlic
- lemon
- chopped fresh dill
Wednesday: 21 Day Fix Sausage, Bean, and Kale Skillet
- olive oil cooking spray
- 1 package Italian chicken sausage
- kale
- canned chickpeas
- crushed tomatoes
- 1 tsp Italian seasoning
- shredded mozzarella
Thursday: 21 Day Fix Crock Pot Quinoa Taco Casserole
- 1 lb organic ground turkey or chicken
- 2 -3 bell peppers
- black beans
- red onion
- garlic
- 1 can of tomatoes and green chilies
- quinoa
- 1 T chili powder (you can add more to taste at the end)
- 1 tsp cumin
- low-sodium chicken broth
- shredded cheddar cheese or Mexican blend
- sprinkle of salt and pepper
- fresh lime
- optional lettuce wraps or corn tortillas
Friday: Fish Tacos with Avocado Mango Salsa {21 Day Fix}
- 12 oz of fish or shrimp
- corn tortillas
- salt free taco seasoning
- cilantro
- 3 limes
- mango
- avocado
- red onion
- jalapeno
- plain Greek yogurt
- shredded lettuce or cabbage
- olive oil spray
