Confession # 122 – As I write this post, I am so sick with worry for my friends and family in Florida. The helpless feeling from watching images and news coverage of Hurricane Harvey last month is back and it’s hard not to been totally consumed by it all.
The confession part? I feel strange posting about food at a time like this, with people displaced and waiting out the storm in shelters far away from their homes. My heart is with my family and friends who are together, keeping us updated as the storm gets closer.
It’s a beautiful day out here, but I am glued to my TV and phone.
I debated whether I should share a meal plan or not for the week…normally I would have it done by now. And I am still not even sure if this post will go live.
But I am writing it anyway.
Sunday is my best day on the blog…in the blogging world that means I get the most pageviews and the most ad revenue (aka how I keep this blog going). Especially when I post a meal plan. I don’t talk much about the business side of the blog unless I’m asked, but that’s the way it goes down.
If this post goes out today, I will be donating 100% of my ad revenue to charities associated with Hurricane Irma and the continued efforts for Hurricane Harvey.
It’s a start. It’s something. And I thank you for reading this and being a part of my efforts.

Comfort Food Favorites Meal Plan & Grocery List
Monday: Momma’s Meatloaf {21 Day Fix}
Groceries:
-
- 2lbs of lean, grass fed ground beef
- seasoned breadcrumbs (we use gluten free)
- 1 onion
- 4 cloves of garlic
- 2 eggs
- shredded pecorino romano (Locatelli brand is the best)
- dry or fresh parsley
- tomato sauce
- potatoes
- carrots
- 1/2 onion
Tuesday: 21 Day Fix Spaghetti Squash Lasagna
Groceries:
- olive oil cooking spray [I use my EVO]
- 1 lb of spicy Italian turkey sausage
- onion
- 2 cloves of garlic
- ricotta cheese
- 1 egg
- homemade tomato sauce
- 1 cooked spaghetti squash (about 4 cups of squash)
- mozzarella cheese
- parmesan cheese
- fresh basil
- salt and pepper
Wednesday: Healthy Shepherd’s Pie {21 Day Fix}
Groceries:
- olive oil or coconut oil cooking spray
- carrots
- celery
- onion
- chicken broth
- Himalayan salt
- tomato paste
- 1 lb organic lean ground turkey
- cauliflower
- red potatoes
- vegan butter, olive oil, or ghee
Thursday: 21 Day Fix Instant Pot Mac and Cheese {Gluten-free}
Groceries:
- cauliflower
- chicken broth (can sub water)
- 1 box of elbow pasta (I used gluten free Barilla)
- vegan butter or ghee (can sub regular butter)
- 2 cups of freshly shredded cheese – I highly recommend sharp cheddar with a small amount (2 T) of pecorino romano mixed in
- garlic powder
- dry mustard
- Himalayan salt
Friday: Italian Wedding Soup {21 Day Fix}
Groceries:
- 1/2 cup of fresh bread crumbs (throw a slice in your blender and pulse)
- 3/4 lb ground chicken or turkey
- 1/2 lb chicken or turkey sausage (I used Spicy Italian)
- 2 cloves of garlic
- 1 tablespoon of fresh chopped basil
- parsley
- Parmesan or pecorino romano
- chicken broth or stock
- 1 egg
- 4 cups of chicken stock or broth
- spinach
- carrots
- onion
- olive oil
- cooked elbow pasta (optional – we use gluten free)
