It appears that Fall is having an identity crisis here in PA. It’s gorgeous out today…and it’s also 90 out.
I knew this would happen. I called it.
After a chilly end to summer, I knew all the pools would close, school would start, and then summer weather would be back.
It’s almost October and honestly, I just want to bake all day and wear cute boots and sweaters. I’m getting a little sick of wearing these cut-offs every day.
Anyway, these are the kinds of problems we want to have, right? I will stop complaining now, but thanks for hearing me out.
So for this week’s meal plan, I’m back to the grill and serving up some of my favorite meals that are perfect for this warm weather, but are honestly delicious any time of year. I’m throwing in an Instant Pot/Crock Pot recipe, too, because I am definitely NOT turning on my oven this week.
Oh – and if you are a regular reader of the blog, the last time I meal planned, I shared in the post that I would be donating my ad revenue for the day to Hurricane Relief. It was hard to choose one place to give with so much need…it’s overwhelming. But a friend of mine passed along info for The Second Harvest Food Bank which is providing meals and relief for storm victims in five different counties of Fla and after reading about their work, I decided to send my donation there. Indian Summer Nights Meal Plan & Grocery List
Monday: Easy Caprese Chicken {21 Day Fix} Serve with Brown Rice or Quinoa
Grocery List:
- boneless, skinless chicken breasts
- good-quality balsamic vinegar
- grape or cherry tomatoes
- fresh mozzarella
- fresh basil
- salt
- pepper
- optional – liquid stevia
Tuesday: Fish Tacos with Avocado Mango Salsa {21 Day Fix} (yummy with 21 Day Fix Cauliflower Rice with Lime and Cilantro)
Groceries:
- 12 oz of fish or shrimp
- corn tortillas (on the 21 day Fix, you can have 1 flour or TWO corn for a yellow.)
- salt free taco seasoning
- cilantro
- 3 limes
- mango
- avocado
- red onion
- 1 jalapeño
- 1/3 cup of plain Greek yogurt
- shredded lettuce or cabbage
- olive oil spray
Wednesday: 21 Day Fix Instant Pot Maple BBQ Chicken (Slow Cooker Option) (So yummy with a quick slaw and a side of corn)
Groceries:
- 1 to 1.5 pounds of boneless, skinless chicken thighs
- tomato paste
- water
- coconut aminos (or sub low sodium soy sauce if not gluten-free)
- pure maple syrup (or sub honey)
- apple cider vinegar
- garlic powder
- onion powder
- sprinkle of sea or Himalayan salt and black pepper
- optional – thickener of your choice (arrowroot, tapioca, cornstarch, etc)
Thursday: Balsamic Chicken and Zucchini Skewers {21 Day Fix}
Groceries:
- balsamic vinegar
- olive oil
- garlic
- honey
- dijon mustard
- oregano
- garlic powder
- onion powder
- teaspoon salt
- 1 pound chicken breast
- red onion, cut into chunks
- 2 medium sized zucchini
- 1/3 cup of feta cheese
- wooden skewers, soaked in water to prevent burning
Friday: 21 Day Fix Honey Glazed Salmon serve with Healthy Sweet Potato Casserole | 21 Day Fix Sweet Potato Casserole [Gluten-free|Dairy-free|Paleo]
Groceries:
Salmon
- 2-4 pieces of wild Alaskan salmon (I love Sockeye from Wegmans)
- juice of one lime
- 1 T plus 1 tsp of coconut oil
- 3 T of coconut aminos (or low sodium soy sauce)
- 2 T honey
Squash- Sweet Potato Mash
- 2-3 sweet potatoes
- 1 medium butternut squash
- coconut oil
- sea salt, black pepper
- ground cinnamon
- maple syrup
- vegan butter (optional – you can use more coconut oil instead)
- 1/2 cup pecans, roughly chopped (you can increase this to 1 cup if you want)
- coconut oil
- honey
