I know a bunch of you just got your Instant Pot this week after that awesome Amazon sale! I also know a bunch of you who have had your IP for months…and yet it’s still sitting there, in the box. You know who you are, lol.
In order to motivate you all to jump right in and USE it (I promise – it will NOT explode or burn your kitchen down!!), here is another week of Instant Pot dinners to get you cooking!
Instant Pot Dinners Meal Plan & Grocery List
Monday: Instant Pot Chicken Tortilla Soup {21 Day Fix}
Groceries:
- 1 1/4 lb raw boneless skinless chicken breasts (about 3-4 Breasts)
- 10 oz. diced tomatoes with green chilies
- 14.5 oz. diced tomatoes (no salt added)
- frozen corn
- black beans (no salt added)
- 1 medium onion
- 1 jalapeno
- 2 cloves garlic
- 4 cups of organic, low sodium chicken broth or stock
- cumin
- chili powder
Tuesday: 21 Day Fix Quinoa Taco Casserole (Crock Pot or Instant Pot)
Groceries:
- 1 lb organic ground turkey or chicken
- 2 bell peppers
- black beans
- 1/2 of a red onion
- 1 garlic clove
- 1 10 oz can of tomatoes and green chilies
- quinoa
- chili powder
- cumin
- organic chicken broth (1 cup for crock pot; 1/2 cup for Instant Pot)
- 2/3 cup of shredded cheddar cheese or Mexican blend
- fresh lime
- optional lettuce wraps or corn tortillas
Wednesday: 21 Day Fix Instant Pot Chicken Marsala (Stove-Top Option)
Groceries:
- 1-2 pounds of chicken thighs (or breasts if you prefer)
- 4 tsp butter or ghee
- olive oil spray
- sliced mushrooms
- 1-2 shallots
- 3 cloves of garlic
- garlic powder
- 3/4 cup of Marsala wine
- 1/2 cup chicken stock or broth
- 1-2 T of tapioca starch, corn starch or rice flour (can sub whatever flour/thickener you have on hand)
Thursday: 21 Day Fix Cauliflower Cheeseburger Mac (Instant Pot Option)
Groceries:
- 1 lb lean grass fed ground beef
- head of cauliflower (4 cups of florets)
- 4 tsp of rice flour (or flour of your choice)
- 4 tsp vegan butter or ghee
- 1 cup of unsweetened original almond milk
- 1 1/3 cups shredded cheddar cheese (use Daiya for dairy free!)
Friday: 21 Day Fix Butternut Squash Soup {Instant Pot/Crock Pot/Stove Top}
Groceries:
- olive oil cooking spray
- 8 slices of turkey bacon
- 2 shallots
- 3 cloves of garlic
- 3-4 cups of chicken or veggie stock
- 1 large butternut squash
- 4 tsp olive oil (or 2tsp oil and 2 tsp butter)
- 1/3 cup of full fat coconut milk
- fresh herbs of your choice – chives or parsley are good options
