I’m so freaking excited you guys.
And this time it’s about something other than food…this does actually happen from time to time.
This week I am heading to Google for the Mediavine Conference…and while this is exciting for me on it’s own (I mean…Google), I am kinda dying because I get to meet all of my blogging besties IN FREAKING PERSON.
If you are in our Facebook group, you know exactly who I am talking about – Stephanie from The Foodie and The Fix, Becca from My Crazy Good Life, and Carrie from Carrie Elle. I CANNOT WAIT. Sorry for all the caps…but they are totally warranted here. It’s gonna be epic.
We have been working together for over a year and we have some amazing stuff launching really soon…so this meet up couldn’t come at a better time.
And to celebrate more, this week’s meal plan is a compilation of all of our signature recipes…our reader favorites! Just a little preview of the good stuff to come. Enjoy!
Blogger Favorites Meal Plan & Grocery List
Monday: Healthier Cracked Out Chicken | My Crazy Good Life
Groceries:
- 1 lb. frozen chicken breast
- 4 slices turkey bacon
- 1/4 cup cheddar cheese
- 3/4 cup cottage cheese
- 1/4 cup Greek yogurt
- 1 tsp garlic salt
- 1 tsp onion powder
- 1/2 tsp pepper
- 1/2 tsp parsley
- 1 tsp fresh dill (1/2 tsp dried)
- Serve with gluten free wraps or pita and a side salad
Tuesday: Chicken Tortilla Soup
Groceries:1 1/4 lb raw boneless skinless chicken breasts (about 3-4 Breasts)
- 10 oz. diced tomatoes with green chilies
- 14.5 oz. diced tomatoes (no salt added)
- 1 cup frozen corn thawed
- 1 cup black beans (no salt added), drained & rinsed
- 1 medium onion
- 1 jalapeno
- 2 cloves garlic, minced
- 4 cups of organic, low sodium chicken broth or stock
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. Himalayan salt
- 1/4 tsp. black pepper
- organic corn tortillas
- olive oil cooking spray
- Himalayan salt
- optional toppings – cheese, avocado, additional jalapeño
Wednesday: Garlic Parmesan Turkey Meatballs | Carrie Elle
Groceries:
- 2 cups sugar-free tomato sauce or homemade
- 2 lbs ground, lean turkey breast
- 1 large (or 2 small) eggs
- 1 1/2 cups freshly grated parmesan cheese – reserve 1/4 cup for topping
- fresh oregano
- fresh basil leaves
- fresh parsley
- fresh garlic
- onion powder
- black pepper
- sea salt
- serve with noodles, spaghetti squash or zoodles and some extra sauce
Thursday: Chicken Marsala
Groceries:
- 1-2 pounds of chicken thighs (or breasts if you prefer)
- 4 tsp butter or ghee
- olive oil spray
- 2 cups sliced mushrooms
- 3 T diced shallots
- 3 cloves of garlic
- salt
- pepper
- garlic powder
- 3/4 cup of Marsala wine
- 1/2 cup chicken stock
- 1 T of tapioca starch, corn starch or rice flour (can sub whatever flour/thickener you have on hand)
- serve with extra veggies, rice, noodles, or zoodles
Friday: Broccoli Cheese Soup |The Foodie and The Fix
Groceries:
- 2 tsp butter
- 1 medium onion
- 2 medium carrots
- 4 cups low-sodium chicken broth (1 (32 oz) box)
- 6 cups broccoli
- 2 cups cauliflower
- 1/2 tsp salt & pepper, to taste
- 1 1/3 cups shredded sharp or extra sharp cheddar cheese
