Instant Pot Chocolate Covered Strawberry Hack | 21 Day Fix Chocolate Covered Strawberries [Dairy-free]

Description

Did you know you can make Instant Pot Chocolate Covered Strawberries?  Yup, you can with this simple Instant Pot Double Boiler Hack!  Another magical feature of the Instant Pot!

Ingredients

Chocolate Chip Option

2 dozen large strawberries 

1 T of Coconut Oil

1 Cup of Dark Chocolate Chips (I use Enjoy Life)

Pantry Chocolate Option 

2 dozen large strawberries 

½ cup cocoa powder

½ cup coconut oil

⅓ cup of maple syrup

½ tsp vanilla extract

Optional toppings – crushed peanuts, shredded coconut


Instructions

Chocolate Chip Option

  1. Pour 1-2 cups of water into the bottom of the Instant Pot liner. Place a glass bowl on top of the liner – make sure the glass bowl fits inside the pot with the top of the bowl above the liner like a traditional double boiler.
  2. Set Instant Pot to Saute – be sure it’s on low or normal and not high.
  3. Place coconut oil and chocolate chips in the glass bowl.
  4. Stir chocolate mixture until smooth.
  5. After the chocolate is smooth, press cancel and then hit the keep warm button.
  6. Dip strawberries in chocolate, covering almost to the stem. Place covered strawberries on a parchment paper lined baking sheet.
  7. If you want, add some crushed peanuts or shredded coconut to some of the strawberries.
  8. Place berries in the fridge for 15 minutes to allow chocolate to harden before serving.  These will keep in the refrigerator for 1-2 days or the freezer for 2 months.

Pantry Chocolate Option

Weight Watchers FS Points:  1.5 FS per Strawberry

Pantry Chocolate Option

21 Day Fix Container Count:2 Strawberries – 1/4 purple, 1.5 sweetener tsp, 2 tsp

Weight Watchers FS Points: 3 points per Strawberry

**If you have smaller strawberries or if you dip lower, you can make and have MORE…so if you make 30 strawberries, you can have 3 for the same counts.  If you make 38 strawberries, you can have 4 for the same counts except 1/3 purple.

If you add peanuts or coconut to your strawberries, be sure to count your orange.  I measured 1/2 orange for each strawberry.

Stovetop option:  In a small saucepan, heat coconut oil over medium low heat, then whisk in cocoa powder, maple syrup, salt, and vanilla extract or chocolate chips. Remove from heat and continue to whisk until smooth.

Microwave option:  In a microwave save bowl, melt coconut oil, then whisk in cocoa powder, maple syrup, salt, and vanilla extract or chocolate chips and stir until smooth.  The chocolate chips will require extra heating – place in the microwave for ten seconds at a time, stirring in between until smooth.
