Monday: Italian Chicken Skillet {21 Day Fix}

Groceries: 

  • 1/2 tablespoon olive oil
  • 4 thinly sliced chicken breasts (1 lb)
  • 3 garlic cloves
  • 1 cup crushed tomatoes, 2 cups if you are serving this with zoodles or pasta
  • dried oregano
  • dried basil
  • crushed red pepper flakes
  • 1 cup of shredded mozzarella cheese (2B Mindset can use low fat)
  • 1 T of Parmesan cheese

Tuesday21 Day Fix Salsa Lime Chicken (Instant Pot/Slow Cooker)(I eat this over a taco salad!)

Groceries: 

  • 12 lbs of boneless skinless chicken breast
  • 1 jar of organic, all natural salsa with no added sugar
  • 1 lime
  • your favorite taco salad ingredients/toppings – I love romaine, Pico de Gallo, avocados, cheese, Greek yogurt, bell peppers, cucumbers and olives

Wednesday:   21 Day Fix Instant Pot Meatloaf and Mashed Potatoes or Momma’s Meatloaf {21 Day Fix}

Groceries: 

  • 1 1/2lbs of lean, grass fed ground beef
  • 1/4 cup seasoned breadcrumbs (we use gluten free)
  • 1/4 onion
  • 7 cloves of garlic
  • 1 egg
  • 1/2 cup of shredded pecorino romano, plus more for topping (Locatelli brand is the best)
  • 1 tsp of dry parsley or 1 T freshly chopped parsley
  • (1) 8 oz can tomato sauce
  • 3 cups of quartered and peeled golden potatoes
  • 3 cups of baby carrots
  • 3 T vegan butter or ghee
  • 1 cup of chicken broth or stock

(2B – leave out potatoes and make extra veggies!)

Thursday:  21 Day Fix Grilled Pork Tacos with Avocado Peach Salsa (peaches are SO good right now)

Groceries: 

  • 1 lb boneless pork chops
  • 1 T salt free taco seasoning
  • olive oil spray
  • salt and pepper
  • 8 corn tortillas
  • shredded lettuce or cabbage
  • 2 peaches
  • 1 1/3 cup of ripe avocado
  • 1 small red or orange bell pepper
  • 1/2 cup red onion
  • jalapeno
  • fresh cilantro
  • 1 lime
  • 1 tsp honey
  • optional add-in – Greek yogurt with fresh lime juice

Friday:  3-Cheese White Pizza with Arugula {21 Day Fix} 

(2B – try this Arugula Shrimp Salad {21 Day Fix})

Groceries: 

  • 1 gluten-free or whole grain flat bread
  • part skim ricotta
  • shredded mozzarella
  • parmesan cheese
  • turkey bacon
  • arugula
  • garlic powder
  • crushed red pepper
  • olive oil cooking spray
  • olive oil (I used lemon infused olive oil)
  • fresh lemon juice
