Description

Cucumber-cantaloupe salad is summer’s healthy way of saying, “I love you, 21 Day Fixers!”

Ingredients

  • 2 cucumbers, seeded and diced
  • 1 cantaloupe, seeded and diced
  • 1/4 cup chopped fresh mint
  • squeeze of fresh lemon (I used my Sicilian Lemon Balsamic Vinegar)
  • drizzle of honey (if you feel you need it)

Instructions

  1. Mix everything together in a serving bowl and enjoy!

Serves about 8- 1/2 cup per serving
