Have a busy week?  No problem!  This 21 Day Fix Meal Plan & Grocery List includes 5 simple, no stress meals that are healthy and delicious!

Ingredients

Monday: Crock Pot Chili Chicken {21 Day Fix}

Tip: Serve with tortilla chips, over greens, or it’s perfect as is!

Groceries:

  • 1 small head of cauliflower
  • 1 onion
  • 1 red or green bell pepper
  • 1 poblano pepper
  • 1 jalapeno pepper
  • 2 cloves of garlic
  • 1 (28 oz) can organic tomato puree
  • ½ cup chicken stock
  • 1/4 cup of hot sauce
  • 1 T chili powder
  • 1/2 T of cumin
  • 1 tsp sea salt
  • ½ tsp freshly ground pepper
  • 1 lb boneless chicken breast
  • Optional toppings: cheese, cilantro, greens, beans, guacamole, Greek yogurt, olives, corn tortilla chips

Tuesday: 21 Day Fix Cauliflower Cheeseburger “Mac” (Instant Pot Option)

Groceries:

  • 1 lb lean grass fed ground beef
  • 4 c cauliflower florets
  • 4 tsp of rice flour (or flour of your choice)
  • 4 tsp vegan butter or ghee
  • 1 cup of unsweetened original almond milk
  • 1 1/3 cups shredded cheddar cheese (use Daiya for dairy free!)
  • Himalayan salt

Wednesday: 21 Day Fix Salsa Verde Pork (Slow cooker/Instant Pot)

Tip: Put this over a salad, make a burrito bowl, or use as a taco filling.  Anything goes!

Groceries:

  • 1 (1-1.5 lb) pork tenderloin (should be enough for 4 servings)
  • 1 jar of Salsa Verde (one without preservatives or added sugar)
  • optional toppings: fresh lime, fresh salsa, avocado, cheese, cilantro, rice, cauliflower rice.

Thursday: Italian Chicken Skillet {21 Day Fix}  

Tip: Serve with zoodles or spaghetti squash for delicious veggie power!

Groceries:

  • 1/2 T olive oil
  • 1 lb thinly sliced chicken breasts
  • 1/4 tsp pepper
  • 1/4 tsp Himalayan salt
  • 3 garlic cloves
  • 1 cup crushed tomatoes, 2 cups if you are serving this with zoodles or pasta
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp crushed red pepper flakes
  • 1 c shredded mozzarella cheese (2B Mindset can use low fat)
  • 1 T Parmesan cheese

Friday: 21 Day Fix Zuppa Toscana (Instant Pot/Stove Top)

Groceries:

  • 2 tsp olive oil
  • 1 1/3 lb spicy chicken or turkey sausage
  • 1/2 of a large onion
  • 3 cloves of garlic
  • 3 cups of cubed baby potatoes
  • 1/2 cup of roasted red peppers
  • 4 cups of organic, low sodium chicken stock (can sub broth)
  • 3 cups of chopped kale
  • 1/32/3 cup of full fat coconut milk
  • Salt
  • crushed red pepper
  • fresh basil (optional)
