How’s everyone doing? Better than me, I hope! I’ve been under the weather for the past week and I am so literally sick of feeling this way! And it’s so, so cold. Sorry for the whining, but I am totally ready for the temps to be back in the 30s this week.
Anyway, my appetite is coming back and these Instant Pot dinners look yummy to me, so that’s good! If you don’t have an Instant Pot, don’t worry – you can still make each of these using your stove top or a crock pot! Let me know if you have any questions!
Instant Pot Favorites Meal Plan & Grocery List
Monday: 21 Day Fix Sweet Potato and Black Bean Chili (Stovetop/Instant Pot)
Groceries:
- olive oil
- 1 ½ pounds of ground turkey
- 1 small or ½ large onion
- 3 cloves of garlic
- 1 can of black beans
- 1 (14.5) oz can of fire roasted tomatoes
- 2 cups of kale, chopped into small pieces
- 2 med/large sweet potatoes, diced (measure about 4 cups)
- 2+ cups of chicken stock
- 3 T salt free taco seasoning
- chili powder
- cayenne (optional)
- salt and pepper
- maple syrup (optional)
- cheddar cheese
- cilantro
- chives
- avocado
Tuesday: 21 Day Fix Zuppa Toscana (Instant Pot/ Stove Top)
Groceries:
- 2 tsp olive oil
- 1 1/3 lb spicy chicken or turkey sausage
- 1/2 of a large onion
- 3 cloves of garlic
- 3 cups of cubed baby potatoes
- 1/2 cup of roasted red peppers, drained and diced
- 4 cups of organic, low sodium chicken stock
- 3 cups of chopped kale
- 1/3 – 2/3 cup of full fat coconut milk
- salt
- crushed red pepper
- optional fresh basil for garnish
Wednesday: 21 Day Fix Instant Pot Balsamic Pork Tenderloin (search my site for a crock pot version!)
Groceries:
- 1 (1.5 lb) pork tenderloin
- 2 tsp olive oil
- 1/3 cup of chicken broth or stock
- 1/3 cup of balsamic vinegar
- 1 T honey or maple syrup
- salt and pepper
- 1 T rice or arrowroot flour (can sub thickener of choice)
- Optional: 2 cups of baby carrots and 2 cups of cubed red potatoes
Thursday: Instant Pot Brown Rice and Sausage Stuffing (see post for stove top directions)
Groceries:
- 2 cups brown rice
- 2 cups organic chicken stock or broth
- 1 lb raw sweet Italian chicken or turkey sausage, casing removed
- 4 tsp olive oil, divided
- 6 celery stalks, chopped
- 1 large onion, chopped
- 1 container sliced fresh mushrooms (I used baby bellas)
- salt and fresh cracked pepper to taste
Friday: Instant Pot Beef and Broccoli (21 Day Fix) (Crock pot – cook on low 6-8 hours, add steamed broccoli at the end)
Groceries:
- 2 tsp olive oil
- 1 1/2 pounds of flank steak, sliced very thin against the grain
- 1 shallot
- 2 cloves of garlic
- fresh ginger
- 2/3 cup beef stock (or sub water)
- 1/3 cup of coconut aminos (or sub low sodium soy sauce)
- honey
- 3 1/2 cups of broccoli florets
- arrowroot or your favorite thickener/flour (cornstarch also works well)
- scallions
- 1/4 tsp salt
- crushed red pepper
