Ingredients

MondayHealthy Instant Pot Lasagna Soup | 21 Day Fix Lasagna Soup [Gluten-free]

Groceries: 

  •  olive oil
  • 1  1/4 lb Italian chicken sausage, ground turkey, or lean ground beef
  • 1 onion
  • 4 cloves of garlic
  • 4 cups chicken broth or stock
  • 1 (28 oz) can crushed tomatoes
  • 1 (14 oz) can of tomato sauce
  • fresh basil
  • fresh spinach,
  • 6 gluten free lasagna noodles
  • small container of ricotta
  • shredded mozzarella cheese
  • parmesan cheese (I use Pecorino Romano)

Tuesday:  Instant Pot Jambalaya (21 Day Fix)

Groceries: 

  • sea or kosher salt
  • garlic powder
  • paprika
  • black pepper
  • onion powder
  • dried oregano
  • dried thyme
  • cayenne pepper
  • red pepper flakes (optional)
  • olive oil, divided
  • 1/2 lb chicken sausage
  • 1/2 lb medium sized shrimp
  • 1/2 lb boneless skinless chicken thighs
  • 1 1/2 cups brown rice
  • 1 1/2 cups organic chicken stock or broth
  • 1 (14.5oz) can of diced tomatoes
  • 1 onion
  • 3 cloves of garlic
  • 3 stalks of celery
  • 2 bell peppers

Wednesday:  Buffalo Chicken Chili (Stovetop) or Buffalo Chicken Chili (Instant Pot) 

Groceries: 

  • carrots
  • celery
  • 2 cloves of garlic
  • 1/4 of an onion
  • 11 1/2 pounds of lean ground chicken
  • 1 (28 oz)can of diced tomatoes
  • chili powder
  • hot sauce, or more to taste
  • 1/2 cup plain Greek yogurt
  • 1/3 cup of blue cheese crumbles
  • olive oil cooking spray
  • chives

Thursday: Instant Pot Beef and Broccoli (21 Day Fix)  (Crock pot – cook on low 6-8 hours, add steamed broccoli at the end)

Groceries: 

  • 2 tsp olive oil
  • 1 1/2 pounds of flank steak, sliced very thin against the grain
  • 1 shallot
  • 2 cloves of garlic
  • fresh ginger
  • 2/3 cup beef stock (or sub water)
  • 1/3 cup of coconut aminos (or sub low sodium soy sauce)
  • honey
  • 3 1/2 cups of broccoli florets
  • arrowroot or your favorite thickener/flour (cornstarch also works well)
  • scallions
  • 1/4 tsp salt
  • crushed red pepper

Friday: Healthy Instant Pot Airfryer Chicken Taquitos (Slow Cooker | Oven Friendly | Gluten-free)

  • 1 lb chicken tenderloins
  • 1 jar of organic salsa
  • 1 lime
  • 1 cup of shredded sharp cheddar cheese or Mexican blend cheese of your choice
  • 12 Corn tortillas
  • olive oil or avocado oil cooking spray
  • salt
  • optional add in: 1 T salt free taco seasoning 
  • Optional toppings:
  • small container of greek yogurt
  • fresh pico de gallo
  • avocado or guacamole 
  • cilantro
