Monday: Cauliflower Cheeseburger Mac or Instant Pot Cauliflower Cheeseburger “Mac” | Instant Pot Low Carb Hamburger Helper [21DF | WW]

21 Day Fix: 1 RED, 1 GREEN, 1 BLUE, 1 tsp (per serving)  |  WW Freestyle: 8 points (per serving)

Groceries: 

  • grass fed ground beef
  • cauliflower
  • rice flour (or flour of your choice)
  • vegan butter, regular butter, or ghee
  • unsweetened original almond milk
  • shredded cheddar cheese (use Daiya for dairy free!)

Tuesday:  Bacon Wrapped Chicken Tenders with Roasted Corn and Black Bean Salad {21 Day Fix} [For low carb, serve with grilled or steamed veggies or a side salad!]

Chicken 21 Day Fix: 1 1/2 RED, 3/4 BLUE (per serving)  |  WW Freestyle: 5 points (per serving)

Salad 21 Day Fix: 1/2 YELLOW, 1/2 GREEN (per serving)  |  WW Freestyle: ZERO points (per serving)

Groceries:  

Chicken

  • chicken tenderloins
  • nitrate free turkey bacon (for keto, use a no sugar pork bacon)
  • pepper jack, sharp cheddar, or cheese of your choice
  • avocado
  • olive oil spray
  • garlic powder
  • Himalayan salt (optional)

Salad

  • black beans
  • roasted corn
  • cherry tomatoes
  • bell peppers
  • red onion
  • cilantro
  • lime
  • honey (optional)

Wednesday: 21 Day Fix Lazy Zucchini Enchilada Skillet

21 Day Fix: 1 1/4 RED, 1 BLUE, 1 GREEN, 1/2 TSP (per serving)  |  WW Freestyle: 7- turkey or chicken or 9- beef points (per serving)

Groceries: 

  • tomato sauce
  • dried oregano
  • ground cumin
  • garlic powder
  • onion powder
  • chili powder
  • olive oil
  • lean ground turkey, chicken, or beef
  • red onion
  • zucchini
  • garlic
  • cottage cheese
  • plain Greek yogurt
  • shredded sharp cheddar cheese
  • salt and pepper
  • cilantro

Thursday:  Instant Pot Chicken and Broccoli (21 Day Fix)

21 Day Fix: 1 RED, 1 GREEN, 1/2 tsp (per serving)  |  WW Freestyle: 5 points (per serving)

Tip: If not low carb, serve over Freezer Friendly Instant Pot Brown Rice – otherwise it’s great all by itself!

  • coconut oil (can sub olive or sesame oil)
  • boneless chicken tenderloins
  • diced shallots

  • low sodium chicken stock (or sub water)
  • coconut aminos (or sub low sodium soy sauce)
