Monday:  Easy 21 Day Fix Chicken Veggie Soup {Stovetop, Instant Pot, Slow Cooker}

Groceries: 

  • carrots
  • celery
  • onion
  • garlic
  • zucchini
  • fresh string beans
  • spinach
  • 32 oz of organic, low sodium vegetable or chicken stock
  • 1 can of diced tomatoes (or fresh)
  • 1 lb chicken breasts
  • Parmesan cheese (optional)
  • Olive oil cooking spray

Tuesday: Deconstructed Fish Tacos with Avocado Cilantro Dressing {21 Day Fix}

Groceries: 

  • 12 oz fish or shrimp
  • salt-free taco seasoning
  • fresh cilantro
  • 3 limes
  • 1 cup diced mango
  • 1 avocado
  • red onion
  • diced jalapeno
  • plain Greek yogurt
  • garlic
  • Salad greens
  • Cabbage

Wednesday: Chicken Pad Thai with Zoodles

Groceries:  

  • 2 chicken breasts
  • coconut oil
  • 2 eggs
  • 3 stalks green onion
  • garlic
  • fresh ginger
  • matchstick cut carrots
  • 2 large zucchini
  • dash of crushed red pepper
  • 1 lime
  • honey
  • coconut aminos
  • peanuts
  • cilantro

Thursday:  21 Day Fix Easy Lemon Chicken (serve with green beans)

Groceries:

  • 1 lb boneless chicken breasts
  • clarified or vegan butter
  • 1 tbs olive oil
  • 1/2 tsp garlic powder
  • salt and pepper
  • 1/2 cup of rice flour (or regular flour)
  • 4 lemons, sliced
  • 1/2 cup low sodium chicken broth
  • fresh parsley (optional)
  • green beans (or other side)

Friday:  21 Day Fix Turkey Burgers with Goat Cheese and Citrus Maple Dijon

Groceries: 

  • Dijon mustard
  • maple syrup (or sub honey)
  • fresh orange juice
  • orange zest
  • fresh lemon juice
  • lemon zest
  • 1 pound lean ground turkey or chicken
  • crumbly goat cheese (I used the honey goat cheese from Aldi)
  • salt and pepper
  • arugula or mixed greens
