Meal Plan & Grocery List {41} Instant Pot/ Stove Top/ Slow Cooker | 21 Day Fix | 2B Mindset

Ingredients

Monday:  Easy 21 Day Fix Chicken Veggie Soup {Stovetop, Instant Pot, Slow Cooker}

Prep tip:  chop extra veggies for the Buffalo Chicken Chili at the same time!

Groceries:  

  • carrots
  • celery
  • 1/2 onion
  • 2 cloves of garlic
  • 1 zucchini
  • 1 1/2 cups of fresh string beans
  • 1 1/2 cups of spinach
  • 32 oz of organic, low sodium vegtable or chicken stock
  • 1 can of diced tomatoes (or fresh)
  • 1 cup water
  • 1 lb chicken breasts
  • Himalayan salt
  • Parmesan cheese
  • Olive oil cooking spray

Tuesday:  2B Mindset Cauliflower Taco Salads

Groceries: 

  • 1lb of ground meat of your choice (we using love lean ground beef)
  • 3 cups of cauliflower rice (can be frozen)
  • 1 cup of low sodium tomato sauce
  • 12 T of salt free taco seasoning (
  • 12 T of water (if needed)
  • taco salad fixings: chopped romaine, bell peppers, red cabbage, fresh pico, shredded cheddar, guacamole, plain Greek yogurt with lime

Wednesday:  Buffalo Chicken Chili (Stovetop) or Buffalo Chicken Chili (Instant Pot) 

(for extra veggie power, I will add spinach or cauliflower rice to my bowl)

Groceries: 

  • carrots
  • celery
  • 2 cloves of garlic
  • 1/4 of an onion
  • 11 1/2 pounds of lean ground chicken
  • 1 (28 oz)can of diced tomatoes
  • chili powder
  • hot sauce, or more to taste
  • 1/2 cup plain Greek yogurt
  • 1/3 cup of blue cheese crumbles
  • olive oil cooking spray
  • chives

Thursday:  Asian Pork Tenderloin 

I love this with cauliflower rice, green beans, sugar snap peas, and carrots!

Groceries: 

  • 1 (1.5 lb) pork tenderloin
  • honey
  • coconut aminos (or sub low sodium soy sauce)
  • 1tomato paste
  • coconut oil
  • sea salt
  • 2 cloves of garlic
  • fresh ginger
  • a dash of crushed red pepper
  • 2 tsp rice flour (sub arrowroot or tapioca for paleo)

Friday: Instant Pot Balsamic Chicken {21 Day Fix) or Slow Cooker Balsamic Chicken

I serve both with zoodles!

Groceries:

  • 12lbs boneless, skinless chicken breast
  • 1 28oz can of diced or crushed tomatoes (I love it with either!)
  • 1/2 red onion
  • 2 cloves of garlic
  • balsamic vinegar
  •  basil, oregano, and garlic powder (you can sub fresh herbs if you have them!)
  • 24 zucchini for zoodles
