Ingredients

Monday:  Simple Spaghetti Squash with Meat Sauce {Crock Pot/Instant Pot} – I love using the Crock Pot and Instant Pot to make Spaghetti Squash!

Groceries:

  • 1 medium to large spaghetti squash
  • 2 tsp olive oil
  • 5 cloves of garlic
  • 1 lb organic ground turkey (or ground beef if you would rather!)
  • 2 (28 oz) cans of crushed tomatoes
  • Italian Seasoning
  • crushed red pepper
  • Parmesan cheese

optional- fresh spinach. I love adding some to my bowl for even more green!

TuesdaySouthwest Chicken Skewers and Cauliflower Rice with Lime and Cilantro – one of my friends made this combination for dinner and messaged me to say how delicious it was!

Groceries: 

Chicken:

  • 1 lb boneless skinless chicken breast
  • 1 red inion
  • 2 green peppers
  • 12 T salt-free taco seasoning
  • 1 lime
  • sprinkle of Himalayan salt

Cauliflower Rice:

  • cauliflower, grated or shredded
  • olive oil
  • 12 cloves of garlic
  • cilantro
  • 1 lime
  • sea salt

Wednesday:  Instant Pot Beef and Broccoli (21 Day Fix) – you can double the broccoli for this or we love it with cauliflower rice, carrots, bell peppers, and mushrooms, too!

Groceries: 

  • olive oil
  • 1 1/2 pounds of flank steak
  • one whole shallot
  • 2 cloves of garlic
  • fresh ginger
  • low sodium beef stock
  • coconut aminos (or sub low sodium soy sauce)
  • honey
  • 3 1/2 cups of broccoli florets OR MORE!
  • 1/2 T arrowroot or your favorite thickener/flour (cornstarch also works well)
  • scallions
  • salt
  • crushed red pepper
  • optional – cauliflower rice

Thursday:  Lazy Zucchini Lasagna –so filling and awesome with a simple side salad!

Groceries: 

  • olive oil cooking spray (I used my EVO)
  • 1 lb lean organic Italian poultry sausage, removed from casing
  • 3 cloves of garlic
  • 2 medium zucchinis
  • 2 cups of fresh spinach
  • 1 cup of homemade tomato sauce (or no sugar added jar sauce)
  • 1 1/4 cups of ricotta cheese
  • 1 egg
  • 1 T of Parmesan cheese, plus more for topping
  • 1 cup of shredded mozzarella cheese
  • fresh ground pepper
  • fresh basil

**optional green for a side salad

Friday: Spicy Sausage and Veggies – this recipe is so easy and quick to throw together!  No spiralizer or special equipment needed and easy to double the veggies or add in your favorites!

Groceries: 

  • 1 lb lean spicy turkey or chicken sausage
  • 1/2 onion
  • 1 garlic clove
  • 2 medium zucchinis
  • 1 cup mushrooms
  • 1 cup tomatoes, halved
  • 1/2 lemon
  • 1/4 teaspoon of Italian seasoning
  • fresh basil
  • cooking spray

**You can always up the veggies!
