Meal Plan & Grocery List {33} “Stoplight” Dinners Week 2| 80 Day Obsession | 21 Day Fix

Ingredients

Monday: 21 Day Fix Instant Pot Meatloaf and Mashed Potatoes or Momma’s Meatloaf (for 80 Day reduce teaspoons by half and omit cheese if you want to be perfectly complaint) 

Groceries: 

  • 1 1/2lbs of lean, grass fed ground beef
  • 1/4 cup seasoned breadcrumbs (we use gluten free)
  • onion
  • 4 cloves of garlic
  • 3 cloves of garlic
  • 1 egg
  • 1/2 cup of shredded pecorino romano, plus more for topping (Locatelli brand is the best, but omit for 80 Day)
  • 1 tsp of dry parsley or 1 T freshly chopped parsley
  • 1 8 oz can tomato sauce
  • 3 cups of quartered and peeled golden potatoes
  • 3 cups of baby carrots
  • 3 T vegan butter or ghee (half for 80 Day)
  • 1 cup of chicken broth or stock
  • salt, pepper

Tuesday:  Sloppy Joe Stuffed Sweet Potatoes (for 80 Day, use 4 tsp of olive oil to cook the meat or add 1 tsp of butter/ghee to eat sweet potato) 

Groceries: 

  • 2 baked sweet potatoes
  • 1 lb lean ground turkey or beef
  • 1/4 onion, chopped
  • 1 green pepper
  • 1 clove of garlic
  • 1/2 tsp chili powder
  • 1/2 tbs cumin
  • 1 tbs honey (or slightly more to taste)
  • 1 (14 oz) can of diced tomatoes
  • 1 (6 oz) can of tomato paste

Wednesday: Crock Pot Chicken Tortilla Soup or Instant Pot Chicken Tortilla Soup (for 80 Day, don’t add toppings, but eat two servings of soup)

Groceries: 

  • 1 1/4 lb raw boneless skinless chicken breasts
  • 10 oz. diced tomatoes with green chilies
  • 14.5 oz. diced tomatoes (no salt added)
  • 1 cup frozen corn thawed
  • 1 cup black beans (no salt added), drained & rinsed
  • 1 medium onion
  • 1 jalapeno
  • 2 cloves garlic
  • 4 cups of organic, low sodium chicken broth or stock
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 tsp. Himalayan salt
  • 1/4 tsp. black pepper

Thursday: 21 Day Fix Quinoa Taco Casserole (Crock Pot or Instant Pot) (for 80 Day, omit cheese and add an extra 1/2 cup of veggies or eat in lettuce wraps) 

Groceries: 

  • 1 lb organic ground turkey or chicken (be sure cook through for crock pot version)
  • 2 cups of bell peppers
  • 1/2 cup of black beans
  • 1/2 of a red onion
  • 1 garlic clove
  • 1 can of tomatoes and green chilies
  • 1/2 cup uncooked quinoa
  • 1 T chili powder (you can add more to taste at the end)
  • 1 tsp cumin
  • organic chicken broth (1 cup for crock pot; 1/2 cup for Instant Pot)
  • 2/3 cup of shredded cheddar cheese or Mexican blend (omit for 80 day)
  • sprinkle of salt and pepper
  • fresh lime
  • optional lettuce wraps (love this option for 80 Day)

Friday: 21 Day Fix Chicken and Veggie Stir Fry (For 80 Day, be sure to use 1 tsp of coconut oil per serving and eat with brown rice, quinoa, or noodles)

Groceries: 

  • 4 cups of veggies of your choice (I love this with asparagus, string beans, mushrooms, and/or bell peppers)
  • 1 lb boneless chicken breast
  • 3 cloves of garlic, chopped
  • 1 lemon
  • 3 tbsp Coconut Aminos
  • 1/2 cup Chicken broth
  • coconut oil
  • rice, quinoa, or noodles
