Confession # 10 – Like the popular vine, I may have said the words “Chipotle’s my life” on one or two occasions. In my defense, these were total moments of weakness as guacamole and chips cause me to lose sight of what’s really important.
But I’m getting off topic. Tonight’s dinner is inspired by Chipotle’s oh-so-delicious burrito bowls. Such an easy meal for the 21 day fix as my bowl here is 1 RED,1 GREEN, 1 YELLOW and 1/2 BLUE.
If you haven’t added this to your weekly rotation, do so immediately as it’s so easy and customizable for the whole family.
We love combinations of brown rice, seasoned ground chicken, peppers, onions, fresh salsa, beans, corn, avocado, cheese…anything goes really.
And to make the meal feel like the real deal, squeeze some fresh lime juice into your rice and add fresh chopped cilantro. Also, use these same ingredients to make a quick and yummy topping.
Cilantro Lime Yogurt Sauce
Mix plain greek yogurt with a tsp of cumin, chopped cilantro, and the juice of one lime.
Takes it up a notch, you know?
Pretty fancy for a weeknight.
