I’ve updated this weekly meal plan to include both 21 Day Fix containers, as well as Weight Watcher Freestyle Points. I even included a newer recipe of mine and updated the post with some Instant Pot directions. Enjoy these family favorites that we make all year round!
Ingredients
Monday: Crock Pot Chicken Tortilla Soup or Instant Pot Chicken Tortilla Soup {21 Day Fix}
21 Day Fix: 1/2 YELLOW, 1/2 RED, 1/2 GREEN (per serving) | WW Freestyle: 1 point (per serving)
Groceries:
- 1 1/4 lb boneless skinless chicken breasts
- 10 oz. can diced tomatoes with green chilies
- 14.5 oz. can diced tomatoes (no salt added)
- frozen corn
- 1 can black beans (no salt added)
- onion
- 1 jalapeno
- 2 cloves garlic
- organic, low sodium chicken broth or stock
- ground cumin
- chili powder
Tortilla Strips:
- organic corn tortillas
- olive oil cooking spray
Optional toppings – avocado, cheese, lime, Greek yogurt, cilantro
Tuesday: 21 Day Fix Avocado, Mango and Quinoa Salad
Tip: Prep your chicken and quinoa on Sunday for a super quick dinner!
21 Day Fix: 1 RED, 1 GREEN, 1 PURPLE, 1 BLUE, 1 YELLOW (per salad) | WW Freestyle: 5 points (per salad)
Groceries:
- baby spinach
- mango
- goat cheese crumbles

- quinoa

Note: recipe makes 1 salad, so adjust your groceries for how many salads you will make
Wednesday: 21 Day Fix Pork Chops with Goat Cheese Butter
Tip: Serve with a side of quinoa and roasted green beans or your favorite veggie (just don’t forget to count your containers or points!)

Thursday: Fish Tacos with Avocado Mango Salsa
21 Day Fix: 1 RED, 1 YELLOW, 1/2 PURPLE, 1 BLUE, and a little GREEN (per serving) | WW Freestyle: 7 points (per serving)
Tip: Make your salsa the night before, for even better flavor! Then, serve with 21 Day Fix Cauliflower Rice with Lime and Cilantro

Tacos:
- 12 oz of fish or shrimp
- corn tortillas (on the 21 day Fix, you can have 1 flour or TWO corn for a yellow.)
- salt free taco seasoning (click for recipe!!)

- fresh mango

- red onion

- plain Greek yogurt
- shredded lettuce or cabbage

Cauliflower Rice:
- Head of Cauliflower
- olive oil

Note: If it’s not grilling weather where you are, you can always make the fish or shrimp on a grill pan inside!
