Freezer Prep
Ok – onto the meal plan! This is another awesome week for Meal Prep and Freezer Prep! On my list to get into the freezer this week:
- Leftovers from my Instant Pot Low Carb Stuffed Pepper Soup. This recipe makes a ton, so I will put away a couple lunch sized portions for myself.
- I will be doubling the Sloppy Joe Stuffed Sweet Potatoes and even baking and freezing extra potatoes for lunches or quick dinners.
- Freezer Friendly Instant Pot Brown Rice – I love freezing sides of brown rice in my Souper Cubes!

21 Day Fix: 3/4 YELLOW, 1/2 PURPLE, 2 sweetener TSP (per serving) | WW: Green – 3 points, Blue – 2 points, Purple – 0 points (per serving) | [Recipe makes 8 servings]
Groceries:- 2 cups Bob’s Red Mill Gluten-free Old Fashioned Oats
- 1/3 cup honey or maple syrup
- 2 eggs
- 2 small or 1 1/2 large ripe bananas
- 2/3 cup pumpkin puree
- unsweetened vanilla almond milk (can sub whatever milk you have)
- vanilla extract
- gluten-free baking soda
- salt
- ground cinnamon
- pumpkin pie spice
- turkey bacon or eggs
Monday: Instant Pot Low Carb Stuffed Pepper Soup

- 1 lb spicy Italian turkey sausage (or sub sweet)

- 1 (14oz) can of tomato sauce
- 3 cups of low sodium organic chicken broth or stock

Tuesday: Healthy Buffalo Chicken Taquitos with raw carrots and celery

Wednesday: Instant Pot Asian Pork Tenderloin

- 3 T of plain Greek yogurt
- 1 1/3 cup of shredded sharp cheddar
- garlic powder
- salt and pepper
- cilantro
