Happy Mother’s Day! My gift to all of you, momma or not, is a meal plan full of meals that are no brainers to put together each night…aka your Sunday won’t be filled with prepping dinners for the week. You can get out and do whatever you want tomorrow including doing nothing at all and still enjoy a healthy meal each night! Also, this plan includes both pizza AND nachos, so it’s basically a love letter to myself.

ICYMI last week I shared a brand NEW Sheet Pan Nachos recipe. It was amazing to see some readers making it the very next day for Cinco De Mayo. But, if you didn’t get a chance to try it, I’m putting it on this weeks plan because it’s so simple and a total crowd pleaser! I also included a fun mix of comfort food, and some staple recipes in our house. Enjoy this yummy week!
All five dinners and a breakfast are already loaded into a *NEW- 7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks. (Don’t forget to make a copy of the spreadsheet – you won’t be able to access it any other way). If you aren’t following the meal plan exactly or can’t find certain ingredients in your store still, that’s ok. We are all just doing our best. Swap out what you need, and the containers will auto adjust!

This week’s 21 Day Fix meal plan and WW Meal plan-
Breakfast: Mini French Toast Casserole Cups [21 Day Fix | Weight Watchers]
21 Day Fix: 1/2 YELLOW, 1/4 RED, 1/4 PURPLE, 1/2-1 sweetener TSP (per muffin) | WW: 1 point (per muffin) | [Recipe makes 12 muffins]
Groceries:
- 6 eggs
- 6 pieces of gluten free, whole grain, or Ezekial bread
- 1 cup of unsweetened vanilla almond milk
- 1 Tbsp vanilla
- 1/2 tsp cinnamon
- 10 drops of liquid stevia (or sub 2T maple syrup or honey)
- 2 Tablespoons pure maple syrup
- 3 c. fresh fruit – anything goes, but berries are a personal favorite!
- sliced almonds (optional)
- Cooking spray or coconut oil
Monday: 21 Day Fix Instant Pot Asian Chicken Brown Rice and green beans – make it all together like in the directions!
21 Day Fix : 1 RED, 1 tsp (chicken) 1 YELLOW (rice) 1 GREEN (green beans) (per serving) | WW Blue: 9 points (thighs) 5 points (breasts) plus rice and green beans (per serving) | [Recipe makes 4 servings]
Groceries:
- 1–2 lbs of boneless skinless chicken thighs (1lb for 4 servings)
- 1/4 cup of honey
- 1/3 cup of coconut aminos (or sub low sodium soy sauce if you aren’t gluten free)
- 1 T tomato paste
- 2 tsp coconut oil
- 1/2 tsp sea salt
- a dash of crushed red pepper
- 2 tsp rice flour (optional)
- brown rice
- green beans
Tuesday: **NEW** Sheet Pan Nachos
21 Day Fix: 12 nachos = 1 YELLOW, 1 RED, 1/2-1 GREEN, 1/2-1 BLUE plus toppings (per serving) [Recipe makes ~4 servings]
Groceries:
- 8 corn tortillas
- Olive or avocado oil cooking spray
- 1 lb ground chicken, beef, or turkey
- 1 cup of canned tomato sauce
- salt
- 1–2 T Salt Free Taco Seasoning
- (Optional) 2 cups of frozen cauliflower rice
- 1/2 –1 cup homemade or store bought pico de gallo or chopped cherry tomatoes
- ⅔ –1 1/3 cup freshly shredded sharp cheddar or your favorite cheese (I love using the full amount of cheese -or- doing half shredded cheese and half of my 21 Day Fix Freezable Cheese Sauce)
- optional toppings: diced avocado or guacamole, diced red onion, cilantro, jalapeños, plain greek yogurt
Wednesday: 21 Day Fix Turkey Burgers with Goat Cheese and Citrus Maple Dijon
21 Day Fix: 1 RED, 1 GREEN , 1/2 BLUE per serving (per serving) | WW Blue: 8 points (per serving) | [Recipe makes 4 serving]
Groceries:
- 1/4 cup Dijon mustard
- 2 T maple syrup (or sub honey)
- 1 orange
- 1 lemon
- 1 lb lean ground turkey or chicken
- 2/3 cup crumbly goat cheese (I used the honey goat cheese from Aldi)
- salt and pepper
- arugula or mixed greens
Thursday: Healthy Instant Pot Baked Ziti | 21 Day Fix Instant Pot Baked Ziti [Gluten-free]
21 Day Fix: 1 YELLOW, 1 RED, 1 1/4 GREEN, 2/3 BLUE, 1/3 TSP (per serving) | WW Blue: 11 points (per serving) | [Recipe makes 6 servings]
Groceries:
- olive oil cooking spray
- 1 ¼ lean ground beef or Italian poultry sausage
- ½ onion
- 2 tsp olive oil
- 3 cloves garlic
- Himalayan salt
- 2 ¼ cups of gluten free pasta
- 1 (28oz) can crushed tomatoes
- 2 T fresh basil (or 1 tsp dried)
- 1 tsp oregano
- 2 cups of chopped spinach
- ¾ cup of ricotta cheese
- 1 cup of freshly shredded or cubed mozzarella
- ⅓ cup of Pecorino Romano or high quality Parmesan Cheese
Friday: 3 Cheese White Pizza with Arugula {21 Day Fix}
21 Day Fix: 1 RED, 1 YELLOW, 1 BLUE, 1/2 GREEN, 1/2 tsp (per pizza) | WW Blue: 10 points (per pizza) | [Recipe makes 1 pizza]
Groceries:
- 1 Flatout Wrap or Pizza Crust
- 1/3 cup of part skim ricotta
- 1/3 cup of shredded mozzarella and parmesan cheese, combined
- 1 slice of cooked turkey bacon
- 1/2 cup of arugula
- garlic powder
- crushed red pepper
- Olive oil cooking spray
- 1/2 teaspoon of olive oil – I used Lemon Infused Oil
- 1/2 teaspoon of Sicilian Balsamic Vinegar or fresh lemon juice
