Salsa Lime Chicken (Instant Pot/Slow Cooker)

Salsa Lime Chicken uses simple chicken breast and store bought (no sugar added) salsa to amp up taco night. Everyone needs a 21 Day Fix recipe like this up their sleeve for those crazy weeks- just dump ingredients in the crock pot or Instant Pot and carry on!

Ingredients

  • 1-2 lbs boneless skinless chicken breast
  • 1 jar organic all natural salsa with no added sugar
  • 1 lime

Instructions

Instant Pot

  • Place chicken in the Instant Pot
  • Top with salsa
  • Lock lid and hit the poultry button or use manual/pressure cook and set for 15 minutes. After cook time, natural release. (For frozen chicken set it for 20 minutes with a full natural release - there are more details on this in the post)
  • Shred chicken and squeeze on some fresh lime juice

Slow Cooker

  • Place chicken in the Slow Cooker
  • Top with salsa
  • Cook for 4-6 hours on low
  • Shred chicken and squeeze on some fresh lime juice
