Avocado, Mango and Quinoa Salad

SO simple to assemble, especially if you have quinoa and chicken already prepped in the fridge!  Avocado, mango, quinoa, chicken, goat cheese, and greens make the most delicious combination for a light and fresh lunch or dinner!

Ingredients

  • 4 cups baby spinach
  • 4 cups mango diced
  • 2/3 cup goat cheese crumbles I love Aldi's honey goat cheese
  • 2/3 cup diced avocado
  • 2 cups cooked quinoa
  • 1 lb cooked chicken breast diced
  • Juice from 1 orange

Instructions

  • Wash and dry baby spinach and distribute equally among 4 plates or bowls (1 cup per bowl)
  • Top each salad with 1 c. mango, 1/6 c. goat cheese, 1/6 c. avocado, 1/2 c. quinoa, and 3/4 c. chicken breast.
  • Squeeze juice from orange evenly over top all four salads and enjoy!
