How to Make New York Strip Steak

New York Strip Steak is a great lean beef option for the 21 Day Fix. Here are three ways to make New York Strip Steak at home on your grill, in your air fryer, or on your stovetop.

Ingredients

  • 2 Strip Steaks about 8 oz each and at least 1.5 inches thick You can also use Ribeye or Filet Mignon
  • Coarse Kosher or sea salt
  • Coarse ground black pepper
  • 2 teaspoons olive oil
  • 1 teaspoon salted butter or ghee

Instructions

Grill

  • Prep: 30 minutes prior to cooking, remove your steaks from the refrigerator, dry with a paper towel. Allow steaks to come to room temperature before grilling. 
  • Preheat grill on high.  Brush both sides of each steak with 1/2 tsp olive oil and season well with salt and pepper - really rub it in.
  • When the grill is hot, place the steaks diagonally on the grill (think 10 o'clock).  Cook for 2-3 minutes. Next, turn the steak to  2 o’clock on the grill so you get those criss cross marks and let steaks cook for an additional 2-3 minutes.
  • Flip and repeat on the other side. **This is for medium rare.  See notes below for more temperature info. Transfer the steaks to a plate and add 1/2 tsp of butter to each steak.  Let steak rest for 5  minutes before slicing. Serve.

Stovetop | Oven

  • Prep: 30 minutes prior to cooking, remove your steaks from the refrigerator, dry with a paper towel. Allow steaks to come to room temperature before cooking. 
  • Preheat oven to 400 degrees. Heat a cast iron skillet over medium high heat until it is hot, but not smoking. (be sure to have your vent fan on as I always manage to set off the smoke detector if I forget!)
  • While the skillet is heating up, brush both sides of each steak with 1/2 tsp olive oil and season well with salt and pepper - really rub it in.
  • Place steaks into the hot skillet and cook for 2-3 minutes, without turning to allow a nice sear. Turn the steaks with tongs and cook for another 2-3 minutes.
  • Remove from heat and immediately place in the preheated oven.  Roast in the oven for another 4-7 minutes, or until the desired temperature is reached. (I do about 5 minutes for medium rare)
  • **See notes below for more temperature info. Transfer the steaks to a plate and add 1/2 tsp of butter to each steak.  Let steak rest for 5 minutes before slicing. Serve.

Air Fryer (Or Mealthy CrispLid | Ninja Foodi)

  • Prep: 30 minutes prior to cooking, remove your steaks from the refrigerator, dry with a paper towel. Allow steaks to come to room temperature before air frying. 
  • Preheat Airfryer to 400 degrees. Brush both sides of each steak with 1/2 tsp olive oil and season well with salt and pepper - really rub it in.
  • Place in your Air Fryer for 10 minutes, flipping halfway (this is for medium rare). Increase or decrease cooking time as needed to reach ideal internal doneness.  **See notes below for more temperature info.
  • Transfer the steaks to a plate and add 1/2 tsp of butter to each steak.  Let steak rest for 5 minutes before slicing. Serve.

Notes

**For a rare steak, cook to 125 degrees F, Medium Rare to 135 degrees F, Medium to 145 degrees F, Medium Well 155 degrees F, Well Done to 160 degrees F. 
21 Day Fix: Slice steak and measure in red container.  Count as 1 RED, 1 TSP (per serving)
