Ingredients

  • 1/2 cup extra virgin olive oil or avocado oil
  • 5 Tablespoons maple syrup or honey
  • 5 Tablespoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • Sprinkle salt and pepper
  • 1 teaspoon orange zest optional

Instructions

  • Combine dressing ingredients in a small bowl, liquid measuring cup, or mason jar with a tight-fitting lid.  Give it a good mix or shake.
  • Store in an airtight container and refrigerate until ready to use, then drizzle it over a bed of greens and your favorite salad toppings.

Notes

21 Day Fix: 1 ORANGE (per 2 Tbsp serving)
WW: 3 points (per 2 Tbsp serving)
Tips:
If your dressing solidifies or separates after refrigeration, you can let it come back to room temperature and then whisk it to emulsify it again.  Or, to make this even faster, place your jar of dressing in a bowl of warm water for a few minutes, then whisk or shake it up.
To avoid this entirely, use avocado oil instead of extra virgin olive oil.
Keep refrigerated for up to one week for best results.
