Roasted Corn and Black Bean Salad

- 1 cup canned black beans rinsed well
- 1 cup roasted corn thawed (can sub plain frozen corn)
- 1 1/2 cup sweet cherry tomatoes quartered
- 2 bell peppers about 2 1/2 cups - I used orange and green for fun colors
- 1/4 cup diced red onion
- 1 tablespoon chopped cilantro
- Juice of one lime
- 1 tablespoon honey optional
Mix all ingredients together and allow to sit in fridge while you prep the rest of your meal. Add honey, if desired, for a slightly sweet flavor.
Enjoy! (This tastes even better the next day after the flavors mix together and sit overnight!)
