These 21 Day Fix Carnitas are healthy, easy to make in your Instant Pot or Crock Pot, and oh so delicious! Use them in your favorite burrito bowl, as a taco filling or in a salad! This post contains affiliate links for products I’m obsessed with.
I’ve already talked about my obsession with Chipotle.
And my absolute favorite thing to add to my burrito bowl are the pork carnitas.
Holy heaven in a bowl.
You’ve tried pork carnitas, right? Please tell me you have. I need to discuss this with people who get it.
Anyway, this crock pot recipe is a pretty sweet copy cat of Chipotle’s Carnitas. Make a whole bunch and create your own burrito bowls, tacos, and mini bell pepper nachos. ‪#‎yum‬
Crock Pot Pork Carnitas recipe is here:
21 Day Fix Crock Pot Pork Carnitas
Ingredients
- 2-3 lb pork shoulder fat trimmed off (2 lbs for Instant Pot)
- 1 cup low sodium chicken broth
- 4 cloves garlic sliced
- 2 tablespoons olive oil
- 1-2 teaspoons chipotle peppers in adobo sauce optional
Salt-free adobo spice mix:
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon chipotle chili powder
- 1/2 teaspoon oregano
Instructions
Crock Pot:
- Trim all the fat off of the pork. This will keep it 21DF approved.
- Using the olive oil, brown the pork on all sides over high heat in a large pot. Do not skip this step (or else!).Transfer the pork to a cutting board and let it cool a bit. Once you can touch it without burning your fingers off, stab the meat with a sharp knife, making little slits. Stuff these slits with the sliced garlic.
- Rub the spice mixture all over the pork and put that bad boy in your crock pot. Pour the chicken broth in the bottom of the pot and turn on low. Cook for 10 hours, shred, and enjoy!
Pressure Cooker:
- Trim all the fat off of the pork. This will keep it 21DF approved. Turn your Instant Pot to saute and add olive oil to the bottom once it's hot. Brown the pork on all sides for about ten minutes. Do not skip this step (or else!).Transfer the pork to a cutting board and let it cool a bit.Once you can touch it without burning your fingers off, stab the meat with a sharp knife, making little slits. Stuff these slits with the sliced garlic.
- Rub the spice mixture all over the pork and put that bad boy in your Instant Pot. Pour the chicken broth in the bottom of the pot and set on manual for 30 minutes (high pressure). After cook time it up, let the steam release naturally for 15 minutes, then switch to venting to release any additional steam. Shred meat and enjoy!

Could I use beef chuck roast in place of pork for this? I have some I need to use and don’t want to make a pot roast. Thanks!
Kelli says
Can you use a pork tenderloin ?
Kaitlyn says
I would love to see how many 21 day fix containers are in each meal!
Nancylynn says
I always include container counts in my recipes!

Hi there. I was wondering if you think this would freeze well? I love to batch cook and freeze for healthy, easy options.
P .S. I have tried a few of your recipes so far and have loved every one! Thank you for sharing and inspiration!
Nancylynn says
That makes me really happy, Laura! And yes – this would be great to freeze! It makes a TON, so you could portion it out and use it for different dinners and lunches!
Laura says
Perfect, thank you for your prompt response. I am going to go and make this now! I am looking forward to trying another great recipe from your site. ?

When do you put in the chipotle peppers?
Nancylynn says
I put them in after cook time because they are really spicy…and I like to add them in a little at a time and taste as I go!

Thank You! My husband and I are really loving your recipes! And your website is so easy to use! Thanks for all of the hard work!
Nancylynn says
This made my day, Lizzie!!
Stevie says
If I have 4 pounds instead of 2 pounds for the shoulder, does the IP cooking time increase? If so, by how much?
Nancylynn says
I think you can do the same amount of time!
Kathy says
Thanks all of your recipes are so helpful! I tried this with bone-in pork butt, which I think was a mistake– the flavor is good but it did not shred and isn’t tender enough… do you ever use pork butt, and if so do you know how I would modify this recipe?
Nancylynn says
I have not…I would increase the time if it’s not shredded!
Nancy Neufeld says
Do you serve pork carnita meat in a taco shell? Or with black beans, corn, avocado, salsa tomatoes etc just in a bowl with brown rice?
Nancylynn says
I have done both! It depends on how many carbs I have left for the day 🙂
