I love me a good taco salad with the works.
Lots of taco meat, cheese, cilantro lime yogurt sauce, homemade guacamole, and fresh Pico de Gallo overtop some chopped lettuce. I could legit eat one every day.
Actually, most days I do. It’s just easy and it’s one of the few meals I can prep for lunches that I don’t get bored of after two days. Anyway, this posts is not about taco salad, but it is about this delicious and fresh tomato salsa, aka Pico de Gallo that I am totally addicted to and it’s one of the things I like best about my near-daily taco salad lunch.
The grocery store near my house sells a delicious Pico de Gallo that reminds me of the one from Chipotle, but it’s SO expensive for the saddest, smallest container. Luckily, it’s super easy to make your own tomato salsa at home. This Pico de Gallo has been my go-to meal prep recipe and my secret weapon for getting in all my greens each day for some time now…so I wanted to share it with you all!
Guys – this recipe makes a ton of salsa and I swear it tastes better every day it sits in the fridge. The key obviously is good tomatoes, and I recommend plum, but it’s also kinda fun to use a mix of a few different types. In the summer I love to grab a few from each crop and throw it all together. If your winter tomatoes need a little flavor boost, it’s ok to stir in a tsp of honey to help them out.
The other key is to dice everything super tiny. The best is when my mom comes over to do this for me. That woman missed her calling as a line chef or sous chef, and loves to chop veggies and make salads. And I love having her do it, so win-win.
What ingredients do I need to make this Pico de Gallo?
- tomatoes
- red onion
- cilantro
- jalapeno peppers
- limes
- salt
What if I don’t have red onion?
I like using red onion, but if you have only yellow or white in the house, you can just use that.
I don’t like cilantro. Do I have to use it?
No. For my cilantro haters (I still love you even though I don’t understand you), feel free to throw in some fresh parsley instead. No biggie!

Homemade Salsa | Copy Cat Chipotle Pico De Gallo
Ingredients
- 1 pound tomatoes cut into ¼-inch pieces I love using a variety of tomatoes
- ¼ cup finely chopped red onion
- ¼ cup finely chopped fresh cilantro
- 2-3 jalapeno peppers seeded, stemmed, and finely chopped
- 2 teaspoons fresh lime juice
- Sea or Himalayan salt to taste
Instructions
- Combine tomatoes, onion, cilantro, jalapeño and lime juice in a bowl. Mix and add salt to taste.
- Let sit for at least ten minutes before serving to let flavors meld together. Enjoy!
