If you are in my Healthy Recipe Community on Facebook, then you know all about them. If not, you need to sit down and listen up because I am about to rock your world with sweet potato goodness.
I love sweet potatoes dishes like Sweet Potato Casserole , Sweet Potato and Black Bean Chili, and Sheet Pan Breakfasts with Sweet Potato, Brussels Sprouts, and Bacon.
But my new love is baking a bunch of Sweet Potatoes and stuffing them with bananas and peanut butter, then topping with some maple syrup and granola. I’m obsessed and have been eating this combo daily!
And while I love making my own granola, the beauty of this dish is the absolute ease of putting it together. So I was super happy to find this new Pan-Baked Bob’s Red Mill Granola at my grocery store. Most store bought granola is super high in sugar, but not these! They are also gluten-free, non-GMO, and full of whole grains and healthy fat.
Even better, they come in four different delicious flavors. My kiddos and I love the Cranberry Almond and Maple Sea Salt best and my mom is obsessed with the Coconut Spice!
We love eating this granola right out of the bag or with yogurt and fruit, but I also discovered it’s the perfect topping for my Peanut Butter Banana Stuffed Sweet Potatoes!

How to Bake Sweet Potatoes in an Oven
This is a super easy way to prep your sweet potatoes without a lot of hands on work!
- Preheat your oven to 400 and line a baking sheet with parchment paper
- Wash and dry your sweet potatoes
- Poke holes in them using a fork
- Bake for 45 minutes or until tender
How to Cook Sweet Potatoes in an Instant Pot or Slow Cooker
Prepping your Sweet Potatoes in an Instant Pot saves you some time and you don’t have to heat up your oven!
- Wash and dry your sweet potatoes
- Poke holes in them using a fork

Add 1 cup of water to the base of your Instant Pot.

Add the trivet to the Instant Pot and arrange sweet potatoes.

Set valve to ‘sealing’. Select manual and set the timer depending on how big your sweet potatoes are: smaller potatoes can cook in 20 minutes, larger potatoes will need 35 minutes.

When timer beeps, allow pressure to naturally release for 10 minutes before releasing the rest of the pressure.
Prepping your Sweet Potatoes in your Crock Pot is a great way to meal prep without any fuss!
- Wash and dry your sweet potatoes
- Poke holes in them using a fork
- Place in the slow cooker, cover and cook on low for 8 hours or on high for 4, until they are tender
How to Cook Sweet Potatoes in the Air Fryer
One of my favorite new ways to prep sweet potatoes is in my Air Fryer or using my Mealthy Crisp Lid! I love how the outside gets nice and crispy!
- Wash and dry your sweet potatoes
- Poke holes in them using a fork
- Spray with olive oil spray and sprinkle with salt.
- Place them into the basket for the Air Fryer or Crisp Lid.
- Cook your potatoes at 390 -400 degrees for 35 minutes or until fork tender.
How to Cook Sweet Potatoes in a Microwave
Guys – did you know you can cook a sweet potato int the microwave? It’s SO freaking easy and quick, too! I love this option, especially when I just need to make one potato for myself.
- Wash and dry your sweet potat
- Poke holes in it using a fork
- Wrap in a wet paper towel
- Cook in microwave for 7-10 minutes, checking halfway to flip and wet paper towel again, if necessary. Add more time of necessary!
Now you are armed and ready to make these delicious Peanut Butter and Banana Stuffed Sweet Potatoes any time you want! And to up the protein on them, I sometimes top with some plain Greek yogurt! You could do coconut yogurt if you are dairy free!
Are sweet potatoes a good choice for the 21 Day Fix and WW?
Yes! Sweet potatoes are an excellent choice for anyone, actually, and any clean eating plan! They are full of vitamin A, C and B6, as well as potassium and magnesium. Yes they have carbs, so 1/2 of a small sweet potato or 1/2 cup mashed counts as a yellow on the 21 Day Fix and 5 points for Weight Watchers, but they are one of the most fiber filled and nutritious carbs to eat!

Peanut Butter Banana Stuffed Sweet Potatoes [+ How to Bake Sweet Potatoes 5 Ways]
Ingredients
- 1 small sweet potato cooked using your fav method outlined above
- 4 teaspoons all natural peanut butter
- 1 banana
- 1/4 cup Bob's Red Mill Pan-Baked Granola I used the Maple Sea Salt
- Cinnamon
- Sea salt
- 2 teaspoons maple syrup
- 1/3 cup plain Greek Yogurt optional
Instructions
- Slice open your sweet potato and divide into two servings.
- Mash each potato half slightly and sprinkle with a little sea salt, 1 tsp of maple syrup, and a dash of cinnamon.
- Melt peanut butter in the microwave for 10-20 seconds or until thin and runny
- Stuff each potato half with 1/2 banana, and drizzle with 2 tsp melted peanut butter
- Top each sweet potato half with 2 T of granola
- Enjoy! I like to mash everything together :). Sometimes I add a third teaspoon of peanut butter because why not?

Had this for breakfast this morning and it was delicious! I made my husband 1/2 like this, and 1/2 with salsa, scrambled eggs, cheese & plain greek yogurt. I had 2 scrambled eggs on the side with mine to get some protein. Yum! Thanks for another great recipe.
