Cucumber-cantaloupe salad is summer’s healthy way of saying, “I love you, 21 Day Fixers!”
Confession #52 – I’m hanging onto summer for dear life.
That’s what the title of this post should be.
I mean, summer isn’t over for another several weeks, people.
Why is everything suddenly pumpkin flavored? Why is the Halloween candy already on display? Are we really buying Hersey bars and somehow not eating them for two months? (They wouldn’t last two MINUTES in my house)
As a teacher, this time of year is always killer. But this year I’m on sabbatical. I am not even returning to school tomorrow with everyone else.
And you know what? It’s still tough. Still so hard to say goodbye to our carefree days of summer vacation.
So while I promise to share lots of fall inspired crock pot and casserole recipes, football dips and pumpkin treats soon enough, here is another yummy SUMMER salad to hold you over.
Because, well, it’s still summer!
Hit the farm stand before Labor day weekend and make this deliciously fresh side for your picnic or BBQ. The flavors are amazing together.
Eat this cucumber-cantaloupe salad in good health!
- 2 cucumbers, seeded and diced
- 1 cantaloupe, seeded and diced
- 1/4 cup chopped fresh mint
- squeeze of fresh lemon (I used my Sicilian Lemon Balsamic Vinegar)
- drizzle of honey (if you feel you need it)
- Mix everything together in a serving bowl and enjoy!

Each 1/2 cup serving is 1/4 GREEN 1/4 PURPLE
