Well, hello there…
Remember me? I feel like it’s been forever since I’ve posted.
I miss you.
I miss blogging.
But my little three year old doesn’t get it. He ain’t got no time for a momma who wants to take fun pictures of food and share recipes.
None.
My husband and I are trying to figure out when I can sneak in some work here and there, but it’s not always easy with our crazy therapy schedule and the lack of sleep in our house. And since the dude is only little once, I am trying to be ok with this arrangement for now. But I still miss it when this many weeks go by between posts.
Anyway, I promise you, I have so many recipes to share as soon as I have a bit more time. Stick with me. 🙂
For now, I’m up early putting together a new meal plan for you with some yummy Memorial Day dishes for your holiday Monday! If you had a few too many yellows this weekend, forgive yourself and move on – get back on track with these delicious dinners! <3 <3 <3
Monday (Memorial Day!): 21 Day Fix Jumbo Lump Crab Cakes {Gluten-free} serve with this delicious Greek Pasta Salad or some roasted asparagus
Groceries:
- extra-virgin olive oil
- olive oil cooking spray
- butter or ghee
- onion
- garlic
- 1 pound jumbo lump crabmeat
- 1 cup fresh bread crumbs (Use Gluten-free bread for GF Crab cakes)
- mayonnaise
- old bay seasoning
- 1 egg white
- 2-3 lemon
- freshly chopped cilantro leaves or chives
Tuesday: Spicy Sausage and Veggies {21 Day Fix}
Groceries:
- 1 lb spicy turkey or chicken sausage
- onion
- garlic
- zucchini
- mushrooms
- cherry or grape tomatoes
- lemon
- Italian seasoning
- fresh basil
Wednesday: Crustless Zucchini Quiche {21 Day Fix} (keep your leftovers for breakfast!)
Groceries:
- 2 medium zucchini
- 1 onion
- 1 small container (15oz) of part skim ricotta
- 3 eggs
- shredded mozzarella
- butter flavored olive oil, regular olive oil, or ghee
- dash of black pepper
- dried basil
- dried oregano
Thursday: Easy Caprese Chicken {21 Day Fix} serve with a side salad
Groceries:
- boneless, skinless chicken breasts
- good-quality balsamic vinegar
- grape or cherry tomatoes, halved
- sliced fresh mozzarella
- fresh basil
- optional – liquid stevia or other sweetener
Friday: Deconstructed Fish Tacos with Avocado Cilantro Dressing {21 Day Fix}
- 12 oz fish or shrimp
- salt-free taco seasoning
- fresh cilantro
- 3 limes
- diced mango
- 1 avocado
- red onion
- 1 jalapeno
- Greek yogurt
- garlic
- salad greens
- cabbage
