What in the world did we do before Pinterest?
And, more importantly, what did we eat?
So many of my meals are now inspired by my pins, like these Mini Zucchini Pizzas.
Life-changing.
As in, my meataterian husband refers to them as his favorite food. #nojoke
And while we have all had Pinterest fails, this is a big WIN.
Lucky for me, it was also super easy to FIX!

Here’s the mini zucchini pizzas recipe:

Mini Zucchini Pizzas {21 Day Fix}
- Prep Time: 15 minutes
- Cook Time: 10 minutes
- Total Time: 25 minutes
- Yield: 1 serving 1x
- Category: Appetizer
- Method: Oven
- Cuisine: Main Dish
Ingredients
- 1/3 cup of homemade tomato sauce
- 1/2 zucchini, thinly sliced
- 2 1/2 tbsp shaved Parmesan OR shredded mozzarella
- garlic powder
- crushed red pepper
- olive oil spray
Instructions
- Set oven to Broil on High
- Spread zucchini out on a baking pan covered in foil or parchment paper
- Spray with olive oil spray and sprinkle with garlic powder and crushed red pepper
- Broil for a few minutes until zucchini starts to brown
- Remove pan from oven and flip zucchini slices. Season again.
- Top each mini pizza with sauce, cheese and sprinkle with oregano.
- Place in broiler again until cheese is melted and golden Enjoy!

Weight Watchers Freestyle Points: 3 per serving (you can lower points further with a lower fat cheese)

How many of these is considered a serving? Do you just see how many slices fit into the green container? They sound delicious!

Hi! I usually measure a 1/2 cup of sliced zucchini using my green container, then I use the other half of my green for the sauce. I use my blue to measure cheese!

Just popped them into my oven, and I am loving the smell already! On my week 2 of 21-day fix, a cloudy/rainy Saturday morning (even in Sunny California!) , and you can imagine how much I need something yummy and cozy! I LOVE zucchini as well…I use it for as much as I can think of. Instead of worrying about the tomato sauce though, I used the canned chunk tomato with green chili’s. It already has the flavor and the oregano sets it up! Thank you…I think next time I will add some fresh spinach leaves on them.
