Confession #29 – I think I’m pretty cool when I get my meatatarian husband to declare zucchini pizzas as his favorite food and Sausage and Cauliflower Casserole {21 Day Fix} as damn delicious.
So I may have gotten a little cocky thinking I could get him to LOVE sweet potatoes through this yummy dish.
Don’t get me wrong – he loved the Sloppy Joes part of this. But, sadly, it didn’t make him love sweet potatoes any more than he did before.
Which is not at all.
I’ve decided there must be something wrong with him then. I mean, he’s pretty perfect in a lot of other ways, but everyone has a few faults.
Anyway, if you love sweet potatoes like I do, make this. ASAP. It’s soooooo delicious and super filling. It definitely felt like a cheat to me even though it’s incredibly healthy.
And for the haters, this could work just as well over a regular potato. Yum!

Sloppy Joe Stuffed Sweet Potatoes
Ingredients
- 2 baked sweet potatoes
- 1 lb lean ground turkey or beef
- 1/4 onion chopped
- 1 green pepper chopped
- 1 clove minced garlic
- 1/2 teaspoon chili powder
- 1/2 tablespoon cumin
- 1 tablespoon honey or slightly more to taste
- 14 oz diced tomatoes
- 6 oz tomato paste
- Shredded cheddar cheese optional
Instructions
- Spray pan with cooking spray and sauté the onions and peppers until tender. Add garlic and sauté for an additional minute.
- Add meat to the same skillet and cook through.
- Next, add spices, honey, tomatoes, and paste to the pan.
- Simmer all together on low for 10-15 minutes.
- Cut sweet potato in half and mash each side a bit to form bowls. Divide sloppy joe mixture over each half.
- Top with cheese if you have leftover BLUE in your day, or eat it plain. Yummy either way!

This was surprisingly incredible. I was hesitant to try this mixed in my sweet potato but I actually loved it! Hubby did too. Kids ate sloppy joe and sweet potato separately, but still a win! I used ground beef instead of turkey and left out the cumin and it was delish!

You can do it with sauce. I still like adding a little tomato paste for flavor and thickness.

For anyone looking to feed this to the little kids too for dinner- I put a little inside a few Tostito scoops, top with the cheese and call them mini tacos- and they’re a huge hit! We just eat ours on the sweet potato and dinner for everyone 🙌🏼 Thanks Nancylynn for another great recipe!

I absolutely loved the recipe! My teenage son however asked me to please stop ruining delicious food by putting it in vegetables LOL!! He loved the Buffalo chicken but not the zucchini boat same with the sweet potato..oh well at least he tries them.

Can you replace the diced tomatoes for another vegetable? I’m new to this and don’t want to screw the recipe up but my boyfriend hates tomatoes; can gt away with the tomato paste but not the actual vegetable lol

Measure 2/3 cup of meat for each serving and top over 1/2 sweet potato.

This sounds really good. All of your recipes have been really easy to follow and are very good. Better than just the boring plain chicken breast and a veggie! I like the 21 Day Fix because of the variety. You don’t have to worry about points and counting calories. I have lost about 6 lbs so far in the last few weeks. My coworker laughs at me because i literally eat ALL THE TIME.
