Confession #9 – I couldn’t live without my crock pot. Not just because of my kitchen renovation, either. Even in a fully functioning kitchen, I turn to the crock pot weekly because, well, walking in the door to the smell of dinner already done is so darn satisfying. Here’s another #21dayfixapproved recipe featuring the crockpot and the Veggetti (another gadget I can’t live without) – Balsamic Chicken with Zoodles!
1. Spray crock pot with cooking spray and add boneless chicken breasts.
2. Season chicken with garlic powder, pepper, basil and oregano
3. Add 1/2 cup of balsamic vinegar, a can of diced or crushed tomatoes, and 1/2 sliced red onion
4. Cook on high for 4 hours
5. Use the Veggetti to make your noodles and then spoon 1 red container of chicken and 1 green container of sauce over 1 green container of zoodles. Add 1/2 blue of parm cheese if you are feelin’ it.
Dinner. Is. Served.
1 GREEN 1 RED 1/2 BLUE (Optional)

How much zucchini do you use? I don’t have a spiralizer, but I have a zoodle that makes the noodles (like a pencil sharpener for a zucchini, LOL)

That will work fine! I usually serve each dinner with 1 cup of zucchini…it depends on the size of your zucchini, but that’s usually around 1 small one per person.

I don’t do 21 day fix so the amounts in recipe don’t make sense… what are they?

Sorry – this is a very old post and I need to fix it! Anyway – those amounts are just for portioning at the end. I usually make this with 1 lb of boneless chicken breasts and I use the large can of tomatoes. Hope this helps!

Hi! I use fresh, but it’s fine to use frozen! Same amount of cook time – it will just take longer to come to pressure! <3

What is the red container and green sauce?

Those containers are for people following the 21 Day Fix. If you are not following the FIX, you can use a 3/4 measuring cup for the red and 1 cup for the green.
