This amazingly delicious Instant Pot Zucchini Lasagna is an even easier version of my super popular Lazy Zucchini Lasagna and it gets a super crispy topping thanks to the Mealthy CrispLid! I know you’ve heard me talk about this CrispLid…and at the risk of sounding like a broken record, I need to you know that I freaking love it.
Yes, it’s an air fryer and it’s really cool to be able to turn your Instant Pot into an Air Fryer.
But you know what’s even more amazing than that?
Crispy, bubbly cheese.
Crispy, bubbly cheese that you made right in your Instant Pot. I mean, one of the only downfalls of the Instant Pot is the lack of crispy food options, but the crisplid solves that. Game. Changer.

Is this Instant Pot Zucchini Lasagna Low Carb?
Yes! There are no noodles in this Zucchini Lasagna – just veggies, lean protein, and cheeses! Perfect for anyone who is gluten-free, grain-free, or following a keto or low carb plan. This is totally a keto lasagna!
Is this Zucchini Lasagna easy to make?
Totally – I have seen a LOT of zucchini lasagna recipes that require fine slicing, precooking, layering and even rolling of your zucchini. Not this recipe! This one is based on my super popular One Skillet Lazy Zucchini Lasagna post. You just saute your meat and veggies, then layer on some delicious cheese and you are done!
Do I need more liquid to cook this Instant Pot Zucchini Lasagna? Will I get a burn notice?
Nope…you have to trust me! This will come to pressure with just the moisture released from the zucchini. Just be sure to layer the sauce on top and do not stir, and just set for zero minutes! Check out the full recipe below!
I don’t like ricotta cheese – is there anything I can sub for it? What about the Poultry Sausage?
I LOVE ricotta cheese in this recipe, but if you aren’t a fan, feel free to sub cottage cheese! And the same goes for the poultry sausage – you can sub for ground beef or ground chicken/turkey or just leave out the meat entirely for a vegetarian friendly meal! How to Make Instant Pot Lasagna with Zucchini
It’s super easy and quick to make Instant Pot Zucchini Lasagna!
Here are the ingredients that you need:
- olive oil cooking spray (I used my Evo)
- 1 lb lean organic Italian poultry sausage, removed from casing
- 3 cloves of garlic, minced
- 4 cups of zucchini, sliced into thin half moons
- 2 cups of spinach, chopped
- 1 cup of homemade tomato sauce (or no sugar added jar sauce)
- 1 1/4 cup of ricotta cheese
- 1 egg
- 1 T of Parmesan cheese, plus more for topping
- 1 cup of shredded mozzarella cheese
- fresh ground pepper
- fresh basil
Follow these steps to make some delicious Instant Pot Zucchini Lasagna
- Spray your Instant Pot with olive oil spray and cook turkey sausage through.
- Add garlic to pan and saute for a minute, then add a zucchini and spinach. Spray with additional olive oil spray and cook for an additional minute, then add in basil.
- Flatten veggies and meat down a bit with your spatula, and then cover mixture with tomato sauce. Do not stir!
- Set IP for zero minutes.
- While your lasagna is cooking, mix one egg, and T of Parmesan cheese into ricotta and sprinkle with fresh ground pepper.
- After cooktime, do a quick release and layer ricotta mixture on top sauce. Finally, top with mozzarella cheese.
- Top with your Mealthy Crisp lid and set for 500 and broil until cheese gets nice and toasty brown. Keep an eye on it, as it happens fast! If you are using a Ninja Foodi, set to broil. Otherwise, you can broil in your oven by placing the lasagna into an oven safe dish. TIP: do this before you layer your ricotta and mozzarella on top!
- Garnish with basil and top with extra Parmesan cheese if desired.
- Enjoy!

This meal is a MUST!!! It’s extremely flavorful and easy. I used grass-fed beef instead and I also added some broken up lasagna noodles under the sauce. The noodles were still hard after the 0 minute pressure but I kept the top on for about 5 minutes and they were very al dente. Next time I’ll try natural release for a few extra minutes. I also didn’t have the broil top and it was still perfection!

Delish! Made this for the volume 10 meal plan. Instead of the sausage I cooked and seasoned some ground turkey. Layered the meat, veggies and cheese in a pyrex dish. Baked at 350 for 20 min. Added mozzarella then broiled for a few. I thought 1/4th would be too much, but it was a perfect portion.

I was iffy as I’m not HUGE on zucchini unless it’s hibachi style. But I chose the volume 10 meal plan for 21DF and I told myself I was following it. I’m blown away by how amazing this was. I used Turkey smoked sausage as that’s something I knew my daughter would eat too and I love it. So sad I had to limit myself to one serving 🤣 I’ll be using this recipe again for sure. Just next time I’ll have the crisp lid thing to broil so I don’t waste a dish.

You can do all of the sauteeing in a pan on the stove top, mix in the tomato sauce, then transfer to an oven safe dish. Add the ricotta mixture and mozzarella to the top and broil in the oven until bubbly! Hope you enjoy!

I’ll ask you the same qustion I asked Dan. My Ninja Foodie is relatively new with little use. This recipe sounds delicious but I’m not sure exactly how to translate the recipe’s directions for the Foodie. Specifically “set IP to 0” Does this mean just set the Foodie to pressure cook but don’t set the timer?

Hi! You can set the Foodi to pressure cook and then press the down button on the “time” side, until it hits 0. Then press start. It will flash a couple of times and then the display will start “spinning” until it comes to pressure. As soon as the pot comes to pressure it will beep and turn to warm (since you set it to 0 min). You can release the pressure at that time. I hope that helps!
