These 21 Day Fix Baked Oatmeal Cups are my family’s favorite breakfast. Create these gluten and dairy free treats ahead of time with whatever toppings your family loves and give yourself a break in the morning!
This is my first post on my new phone. After my toddler threw my old phone in the bathtub for the fifth time, it finally gave up. The poor thing just had enough abuse.
So I ended up going with the 6+. Trying to give it some time, but it definitely feels enormous and awkward. I thought it would make blogging easier…still not sure about that.
Anyway, I’m so happy for the cloud, as I still had pics of recipes from before that fatal plunge that I never shared.
Like these customizable baked oatmeal cups!
For those who like my French Toast Cups, you must give this recipe a try! Add them to your food prep list so you can enjoy them this week.
They feel like a cheat to me. But that’s not even the best part.
They are totally customizable for the whole family; top with everyone’s favs and you are good to go!
My favorite topping is fresh peaches! My daughter was all about the chocolate chips, and my husband and one year old loved all of them. In fact, these didn’t last more than a day and a half in my house.
So much for prepping!
Where should I store these Baked Oatmeal Cups?
If they do end up lasting longer than mine did, just be sure to store them in the fridge in an airtight container or ziplock bag. They should be good for several days.
Can I freeze these 21 Day Fix Baked Oatmeal Cups?
Yes! These freeze very well and can last up to three months in an airtight container or freezer bag. You can thaw in the refrigerator or warm them in the microwave or oven.
Can I use a different kind of milk in these Oatmeal Cups?
Since my son is dairy free, I used unsweetened vanilla almond milk in these. Coconut milk and low fat dairy milk would also be good options!
How do you count Chocolate Chips on the 21 Day Fix?
If you are on the 21 Day Fix topping these with chocolate chips, you will have to count them as a treat swap. You can have a treat swap three days a week according to Autumn, so plan accordingly!

Baked Oatmeal Cups
- Coconut oil or coconut oil spray
- 2 large eggs lightly beaten
- 1 teaspoon pure vanilla extract
- 2 large bananas mashed OR 2 cups unsweetened applesauce. (I used 1 of each)
- 1 tablespoon honey or maple syrup
- 2 1/2 cups old fashioned rolled oats
- 1 tablespoon ground cinnamon
- 1 1/2 teaspoons baking powder
- 1 1/2 cups unsweetened almond milk
Toppings of your choice:
- berries, fruit, nuts, pure maple syrup, chocolate chips
- Preheat oven to 350 degrees. Coat muffin tin with coconut oil.
- Combine eggs, vanilla, bananas and honey in a large bowl. Mash bananas and mix well. Set aside.
- Add oats, cinnamon and baking powder in a small bowl, then stir well and combine with banana mixture
- Stir in almond milk and mix well.
- Divide oatmeal evenly between prepared muffin cups and add toppings of your choice!
- Bake 20 to 25 minutes or until brown.
- Cool slightly and serve immediately, or save for the week ahead!

Hi so 2.5 cups of uncooked oats equals 10 yellows. So it should seem that each muffin would be closer to 1 yellow not 1/2 yellow. Can you please confirm? Thanks!
Hi Kristina! 1/3 cup of uncooked oats is 1 Yellow so 2.5 cups is a little over 7 yellows. So that’s how it comes out to be about 1/2 YELLOW per muffin – yes, rounded down slightly!
This is a good breakfast for 21df. I actually don’t have a muffin tin, so I baked in a loaf pan and made a bread instead. Worked nicely. I only used 1 cup almond milk, not more and baked 50 min.

When you say 2 cup of Apple sauce, do you mean 2 measuring cups? Or 2 cups that Apple sauce came with???
I used both banana and apple sauce as you do, but 1cup of apple sauce is a lot more than 1 mushed banana…. mine was so much runny than yours. I didn’t see your apple sauce on your video so I went with 1 measuring cup of apple sauce.
Yes – two measuring cups. You can do just all bananas next time and see if that texture feels better for you!

This was a great recipe! I doubled it so I can freeze some. I did cut the milk down a little, but good thing to remember it is oatmeal and not a muffin so expect a different texture. Overall wonderful and can’t wait to make again.

Yum! This was my first time making these oatmeal cups. Like other commenters I assumed they would turn out like muffins but actually they are more like oatmeal! They seemed a bit moist on outside.i baked for 26 minutes then kept increasing to 30 minutes to firm them up. We ate them anyway. I put then in fridge in Tupper Ware container. 2 days later I warmed them back up in oven at 350 for 10 minutes and they came out firmer! They are a keeper now!

I’m on the 21 day fix and struggling because I am sensitive to eggs (but have been eating them anyways) but I know I need protein in the mornings or I am starving by 10am…. I need a grab and go protein and I’m hoping to hide it in something with carbs and fruit like these delicious muffins…. any thoughts on adding protein powder to the recipe? I’m lactose intolerant too unfortunately so yogurt is only an occasional fix. I’ve loved the 21 day fix so far but I just can’t bring myself to eat meat/chicken/fish so early in the morning!

Hmmm…I still had the same problem as several others with the soggy texture, even after the adjustments that were recommended in the comments following the recipe. Followed the ingredients to the letter. I let the mixture sit for 30 minutes before placing them in the oven per the comments. After 30 minutes at 350, I bumped up to 375 for another 7 minutes. (You could tell the batter was still completely raw after 25 minutes at 350). They just finished cooling and are, frankly, kind of disgusting. Just a terrible soggy texture (and I love oatmeal). I wanted to be able to leave positive feedback, but these were a waste of a lot of my time, so I can’t recommend them at all. Really not sure how anyone had success with this recipe. :-/ I do see that a lot of people comment that the recipe looks good, but they haven’t actually made it, so I’m just giving an actual review here.

Made these for the first time last weekend with just applesauce, no bananas. I loved them. They were super moist. I made them again today and I hope they come out just as good as last time because I forgot to add the almond milk! Opps!

I have seen a couple other similar recipes and they also said you could substitute canned pumpkin in place of the bananas and/or apple sauce. Would that be suitable for this recipe as well?

I have never tried this without eggs…I know some recipes call for a flax egg, but I’m not sure if that would work with this? I’ll see what I can find out…
My son has an egg allergy as well. I made these tonight with two bananas and 1/2 cup applesauce to replace the eggs. It turned out beautifully. We ate one warm right out of the oven.

These were amazing! Mine came out just like muffins. I used a large toaster oven and cooked it a little longer.
I used just bananas and paper muffin cups, but generously oiled each cup. They came out perfectly, they didn’t stick to the paper at all.

The greek yogurt worked ok, definitely a softer ‘muffin’ but still tasty nonetheless! I only added 1 1/2 cups of yogurt instead f the full 2 cups

Hi! I’m actually not sure, as I don’t count calories (Yay, 21 Day Fix!). You could try plugging the ingredients into my fitness pal – although I’m not sure any online nutrition calculator is perfectly accurate. I am sorry I am not more help! Hope you enjoy the muffins!
I am new to 21 day fix..and I wondering..wouldn’t you need to account for the almond milk somehow…isn’t it something like a yellow ?
Hi Kim! You don’t need to account for it because it’s only a small amount per muffin. You can have up to 4oz free each day! Yay!

I’m having a very difficult time getting them out of the pan. How long should I let them cool in the pan for before I try to remove them? I followed the recipe with no substitutions and I greased the pan.
Definitely allow them to cool awhile – the texture improves as they cool. Use a butter knife to help you get them out if they are sticking…

These oatmeal cups were beyond delish!!! I have been looking everywhere for a healthy oatmeal recipe without using banana and am so happy I have finally come across one that works with applesauce instead. The texture and taste were amazing! (I used a little extra cinnamon in mine!) The only hard part was waiting for them to be ready! I put flax seeds and raisins on the next batch and can’t wait to see how they turn out. Thanks for this great recipe, will definitely be a breakfast staple for us!

As someone else noted mine also turned out very, very gummy. I use 1 banana and 1 cup applesauce. I would recommend using much less milk than called for. This wasn’t at all muffin like.

Hi there! I made these today and mine came out a little gummy in texture…not like a true muffin. I used the two cups applesauce and the mixture seemed really liquidy before I baked them. This hasn’t happened to me…but I wonder if the texture will improve after they cool a bit? The mixture is liquidy, but I typically use one banana and one cup of applesauce. Hmm…I am very sorry!!! Anyone else care to chime in with advice??
Let the mixture sit for 20-30 minutes before filling the muffin tins and baking. This gives the oats time to soak up the liquids and gives better results.

Mine were also so super gummy afterwards. I even put them back in the oven for another 10+ min to see if they would stiffen up. I felt like I should drastically reduce the amount of milk? I used 2 bananas. Anyone else have this issue?

How do we factor in the chocolate chips if we choose to use them? I’ve scanned the 21 Day Fix book and haven’t spied anything related to those, but this isn’t the first recipe I’ve come across that uses them and is 21 day fix approved.
Hi! If you want to use them, you measure them in the orange container. A whole orange equals a yellow. You will only use a few for each muffin, so it will be a fraction of a yellow for each muffin. Make sense?

how many can you eat per serving per person when on a diet
That depends on the diet. If you’re calorie watching, you can use the nutrition information on your ingredients to find each muffins calorie count (different flavors will vary) and then calculate how many you can have.
It’s the same way if you’re doing the 21 day fix, but using the serving amount she lists instead of the calorie counts.

I love this recipe. I have GERD, so I need recipes that are more alkaline to the stomach and this one certainly is. I would have to stick with a couple of toppings though. I have been wanting to use coconut oil but was afraid it tastes like coconut. Does it have that taste? Thanks

What can I do about the soggy centers in my muffins. I even tried cooking them longer and that didn’t help. I used banana/applesauce in mine. I see I am not the only one with this problem. Thanks for any help.
Since this is a baked oatmeal cup, it won’t have the same texture as a true muffin. That being said, every oven is different. Have you tried to increase the temp? That might help. I find that the texture of mine improves as it cools and they aren’t soggy.
