21 Day Fix Meal Plan & Grocery List {21} Summer Favorites

My 21 Day Fix Dinner and Grocery Lists are the perfect way to get organized with tasty meals for the week ahead!  Don’t forget to use the handy grocery lists to jot down what you need at the store!

Hello, friends!

Are you enjoying your summer?  I know I have been even more quiet than usual, but I think about you a lot.  Is that weird?  I mean it in the least creepy way possible.

Anyway, I am trying my best to embrace the fact that my children are both home with me all summer and that this time is fleeting…even if it means I have almost no minutes in my day for me and I quite possibly might lose my mind before August.  #momlife

Remind me of this in September when I am crying at Back to School.

Anyway, I am SO excited about this week’s meal plan…so many delicious summer flavors here!  And if you are looking for more summer dishes, check out my warm weather favorites and my newest zucchini recipe roundup!  Yum!

21 Day Fix Dinner and Grocery List – week 21

Monday: Zucchini Crab Soup {21 Day Fix}

Groceries: 

  • onion
  • garlic
  • 3 medium zucchini
  • 32 oz reduced sodium organic chicken broth (veggie is great, too!)
  • plain Greek yogurt
  • fresh grated Parmesan cheese
  • fresh herbs (parsley, basil, dill or thyme would all work – if desired)
  • lemon
  • Jumbo lump crab
  • olive oil

Tuesday: Chicken and Zoodles with 21 Day Fix Simple Spinach Pesto

Groceries: 

  • 1 lb of grilled chicken breast
  • 4 cups of zoodles
  • 4 cups of spinach
  • fresh basil (if you have it. I’ve made it with and without and it’s perfect either way.)
  • garlic
  • lemon
  • 1/3 cup of a good Locatelli cheese (Pecorino Romano) or a good quality feta (SO, SO good with both)
  • olive oil

Wednesday: 21 Day Fix Turkey Burgers with Goat Cheese and Citrus Maple Dijon

Groceries: 

  • Dijon mustard
  • maple syrup (or sub honey)
  • 1 orange
  • 1 lemon
  • 1 pound lean ground turkey or chicken
  • goat cheese
  • salt and pepper
  • arugula or mixed greens

Thursday: 21 Day Fix Spinach and Strawberry Caprese Salad

Groceries: 

  • 4 boneless, skinless chicken breasts
  • balsamic vinegar
  • strawberries
  • fresh mozzarella, cut into bite size pieces
  • baby spinach
  • fresh basil
  • optional – liquid stevia

Friday: 21 Day Fix Peachy Goat Cheese Pizza

Groceries: 

  • whole grain or gluten free wrap
  • goat cheese (I used honey goat cheese.  To die for!)
  • peaches
  • red onion
  • balsamic vinegar
  • arugula
