Confession #31- The PeaPod app has changed my life.
I have been a fan of grocery delivery services since I had my first child over five years ago. But sometimes going online and assembling a grocery list in time for delivery is as difficult to fit in as going to the store.
Enter the app! With literally a few clicks, my order is in and my delivery is scheduled.
What am I going to DO with all this free time?
That was a joke, obviously.
Anyway, this shrimp, kale, and butternut squash saute was inspired by this week’s delivery. I actually ordered spaghetti squash, but received a butternut squash instead.
No biggie. When life gives you butternut squash…
This is something I planned to try with sweet potatoes, but super happy to use a GREEN instead with this squash. Score!
Butternut squash can be tricky to deal with, but I have a great hack to help you cut it without sacrificing a finger in the process! Use this How to Cut Butternut Squash tutorial to make this quick skillet dinner even easier!

Very easy and tasty! I had spinach instead of kale, which worked fine. Also, didn’t have raw red onion, but I did have some homemade marinated red onion, which I drained & cooked as directed and it added a really nice extra layer of flavor.
Oooh! I love the idea of marinated red onion! What was it marinated in? Thanks so much for your comment and rating, Karen!!
This batch was white vinegar, raspberry vinegar, tiny bit of honey, salt, red pepper flakes. I often switch out vinegars, sweeteners, and spices. I don’t like raw onion in food, but marinated is awesome!
I just came across your recipe, it looked and sounded delicious so I thought I’d give it try with one change. I had sweet potato spiral noodles on hand and used that instead of the diced butternut squash. The results- absolutely delicious. This is a keeper! Thank you.
That’s awesome!! I will need to try it that way, too!! <3
