Confession #27 – My love for Pinterest is no secret. I’ve said it before- how in the world did I function before it? Especially at 3am when my youngest is up, for no particular reason, and I can’t get back to sleep.
I sometimes see other momma friends pinning away in the middle of the night. You know who you are.
Anyway, I get SO disappointed when I try something that looks amazing on Pinterest, but it just doesn’t deliver.
Like the casserole I made this week. It looked very promising and simple, but I just didn’t love it.
The recipe called for grated cauliflower, and I wasted almost a whole head of it. Total bummer.
I did reserve a small amount and decided to try making cauliflower rice, something else I have seen pinned many times.
OMG. Talk about a silver lining.
It was DELISH. Like, for real. And, if you are pinning this, I promise this ain’t no fail. It is yummy alone, as a side dish, or with carnitas or a burrito bowl! So many options, you better get to it!
I only wish I had more, and I can’t wait to make it again.
Here is the delicious, easy, and healthy 21 Day Fix Cauliflower Rice recipe. Enjoy!
21 Day Fix Cauliflower Rice with Lime and Cilantro
- Cauliflower grated or shredded
- 2 teaspoons olive oil
- 1-2 cloves garlic minced
- Juice of a lime
- Sea salt
- To grate the cauliflower, carefully use a hand grater, or simply use a food processor.
- Heat your olive oil over med-low heat and sauté the minced garlic. Add the cauliflower and stir fry until it starts to turn golden brown.
- Turn off heat and add chopped cilantro and fresh lime juice.
- Sprinkle with sea salt.

How much cauliflower do you use? It sldoesn’t how much in the recipe for quantity of anything. I just want to make sure my counts are right for 21 day fix. Thank you so much!
Do you measure the cauliflower green container when it’s chopped before you rice it or after cooking? I only ask because you get so much more volume after it’s been riced. I’m currently doing 21DFX.
Hi Melissa – there is no hard and fast rule about this when it comes to veggies, but I do tend to measure while cooking, so I would say before for cauliflower rice.

I made broccoli rice and liked it, but I’m more excited about this one. What gave it the red color? I’m puzzled by that one.

Hi! I think you are seeing brown and not red…as the “rice” does kind of brown a bit (at least that is how I make it :).
