Base mixture:
- eggs
- liquid egg whites
- low fat cottage cheese
- salt and pepper
- Cooking oil spray or parchment liners

Substitutions and Variations
- You can make it spicy by adding a pinch of red pepper flakes or diced jalapeños into the mix.
- If you’d like a dairy-free option, substitute cottage cheese with a dairy-free alternative like blended tofu. Make sure it is drained fully so it doesn’t add too much liquid to the mix.
- Add more protein by mixing in cooked turkey sausage or diced ham.
- You can make your egg bites more kid-friendly if you have picky eaters by sticking to classic flavors like shredded cheddar and mild veggies.
Step by Step Instructions
Step 1: Preheat your oven to 350°F. Assemble your ingredients for your base. Prep your muffin tin at this time also. There are several options in the recipe card for this.
Step 2: Place the eggs, cottage cheese, and the salt and pepper. Mix until smooth. Stir in your mix-ins after you are done blending. You may also wish to reserve some to add to the top of the eggs when they are mid-way through baking so they don’t sink.
Step 3: Pour the egg mixture into the prepared muffin pan.
Step 4: Place the pan into the oven and bake for 20-25 minutes. The eggs will puff up and brown slightly on top, but deflate some after baking.
Step 5: Remove from the oven and serve with extra fixings for people who want to add more on top!
Meal Prep and Storage
Prep Ahead: These easy homemade egg bites can be made several days in advance. They also freeze well, especially if you vacuum seal them before freezing.
To Store: Store your leftover protein egg bites in an airtight container in the fridge for 3-4 days.
To Reheat: Reheat in the microwave until steaming hot. You can also reheat in an air fryer if you prefer.

Starbucks Egg Bites are so fluffy because they are cooked using the sous vide method. This technique involves cooking the eggs at a low, consistent temperature in a water bath, which prevents them from overcooking and gives them a light, custardy texture.
Starbucks also adds cottage cheese and heavy cream, which contribute to their creamy and airy consistency. Blending the mixture thoroughly also helps incorporate air, making them even fluffier.
For a similar texture at home, you can try baking your egg bites in a water bath by placing your muffin tin in a larger pan filled with hot water while baking.
This step is necessary to make sure all of the elements of the egg bites are evenly incorporated, but if you don’t have these tools you can still make this recipe by mashing the cottage cheese well and using a whisk to blend everything together. It won’t have the same exact texture as if you are using a blender or power tool, but it will still be delicious. An immersion blender also works for this dish.

Cottage Cheese Egg Bites

Ingredients
For the egg bites:
- 4 large eggs
- 1 cup liquid egg whites
- 1 cup low fat cottage cheese
- ½ tsp salt + pinch of pepper
- Cooking oil spray or parchment liners
Optional mix-ins:
- Fresh chopped spinach
- Chopped red peppers or sun-dried tomatoes
- Bacon bits
- Shredded cheese
- Freshly chopped basil or chives
Instructions
- Preheat oven to 350 F. Line your muffin tin with parchment cupcake liners – not shown in the pictures, but TRUST ME! You could also use a silicone cupcake pan, but if you are sensitive to the taste of silicone, then definitely try the parchment liners. If you don't have liners, spray your pans very well with cooking oil spray.
- In a blender or food processor, add eggs, cottage cheese, salt and pepper. Blend until smooth. Stir in any mix-ins.
- Pour egg mixture into prepared muffin pan and bake for 20-25 minutes or until egg bites have set and tops are golden brown. The egg bites will puff up, but will deflate a bit after they cool.
- Remove from the oven and allow egg bites to cool slightly before removing from the pan. To help with this, slide a butter knife around the sides of the egg bites where they meets the pan to loosen them up and prevent sticking.
