I took the last week off of meal planning to spend some extra time with family, but I am excited to be back at it this week…especially since it’s New Years Eve and so many of us are ready to kick the holiday eating to the curb and make a fresh start!
This week’s menu has some of my favorites, as well as a new recipe from my awesome friend Stephanie from The Foodie and The Fix. She is one of the talented bloggers that I have teamed up with for our new 21 Day Fix Facebook Support Group! There is a lot of great energy in the group already and I am so excited for the extra support and motivation! Join us if you haven’t already!
Anyway, these recipes are fairly budget friendly (because I may have given all my money to Amazon Prime) and easy to make as we all try to get back into our routines and kick start our healthy habits! Like always, I’ve included the grocery list under each recipe – hope this helps you get organized!

Budget Friendly Meal Plan & Grocery List
Monday: Simple Crock Pot Spaghetti Squash with Meat Sauce {21 Day Fix}
Groceries:
- 1 medium to large spaghetti squash
- 2 tsp olive oil (I used my Tuscan Herb EVOO from The Bodacious Olive)
- 5 cloves of garlic, crushed
- 1 lb organic ground turkey (or ground beef if you would rather!)
- 2 (15 oz) cans of crushed tomatoes
- 2 tsp Italian Seasoning
- Crushed red pepper
- Salt, Pepper
- Parmesan cheese
- Optional – spinach for extra green!
Tuesday: Sausage and Cauliflower Casserole {21 Day Fix} (this is a great make ahead! Throw it together on and store in the fridge. Bake right before serving!)
Groceries:
- 1 head of cauliflower
- Spicy turkey sausage
- 1/4 diced onion
- 1 minced clove of garlic
- 1/3 cup of low sodium chicken broth
- small container of ricotta cheese
- 1-2 cups Spinach and/or kale
- Cooking spray [I use my EVO
]
- 1/3 cup Parmesan cheese blend – I love the shaved kind for melting!
Wednesday: Slow Cooker Maple Mustard Chicken and Potatoes (Super excited to try this one!)
Groceries:
- 6 large red potatoes
- spicy brown mustard
- maple syrup
- 2 lbs chicken breasts
- salt and pepper, to season
Thursday: Chicken Zoodle Soup (you could easily make this in your crock pot! Just throw everything together (besides zoodles) and cook for 6-8 hours on low)
Groceries:
- olive oil spray (I used my EVO)
- 1 cup of chopped celery
- 1 small diced onion
- 2 cups of chopped carrots
- 1-2 lbs of boneless or bone-in chicken breasts, skin removed
- carton of organic chicken stock
- 1/4 cup of tomato sauce (mainly for color, can leave out)
- zucchini for zoodles, pasta, or rice
Friday: 21 Day Fix Spinach and Artichoke Pizza
Groceries:
- olive oil spray
- olive oil
- garlic
- mozzarella cheese and grated parmesan, mixed
- fresh spinach
- small jar of diced artichoke hearts, drained and quartered
- ricotta cheese
- Flatout or similar wrap
- sprinkle of red pepper (if desired)
