I am currently running an Instant Pot Beginner Challenge group on Facebook and OH MY WORD, the people are are rocking it!! We are creating more confident IP users by the day! It makes me so happy to help my readers cook quick and healthy meals. Last week we focused on the basics and made hard boiled eggs and Chicken Tortilla Soup (featured below). This week: the saute function and trouble shooting the burn message. We are having so much fun!
Because I have so many newly-minted IP lovers, I wanted to make sure to highlight some Instant Pot dinners for this week’s meal plan. And because not ALL my readers exclusively follow the 21 Day Fix, I have highlighted some of my recipes that are complete with Weight Watcher Freestyle Points.

Instant Pot Dinners Meal Plan and Grocery List
Monday: Instant Pot Sausage and Lentil Soup (21 Day Fix/Stove-top Option)
21 Day Fix: 1 1/3 GREEN, 3/4 RED, 1 YELLOW, 1/3 tsp (per serving) | WW Freestyle: 3 points (per serving)
Groceries:
- olive oil
- 1 lb of Italian Chicken or Turkey Sausage – spicy or sweet
- 1/2 of an onion
- carrots
- celery
- garlic
- zucchini
- 1 1/2 cups of dry lentils
- 6 cups of low sodium chicken stock or broth
- baby spinach
- fresh basil or sub dried
- Himalayan salt
- crushed red pepper
- Pecorino Romano cheese
Tuesday: 21 Day Fix Instant Pot Caprese Chicken (Slow Cooker Option)
21 Day Fix: 1 RED, 1 GREEN, 1/2 BLUE (per serving) | WW Freestyle: 3 points (per serving)
Groceries:
- 1/2 large yellow or red onion
- 3-4 cloves fresh garlic
- 1 lb. boneless, skinless chicken breasts
- 3 1/2 cups of cherry or grape tomatoes
- balsamic vinegar
- extra virgin olive oil
- crushed red pepper (optional)
- sea salt and fresh ground pepper, to taste
- fresh basil
- mozzarella cheese, shredded
- cooking oil spray
- Optional: brown rice, gluten-free noodles, or zucchini noodles
Tip: I love this with my Freezer Friendly Instant Pot Brown Rice!
Wednesday: Instant Pot Asian Steak Lettuce Wraps | 21 Day Fix Asian Steak Lettuce Wraps
21 Day Fix: 1 RED, 1/2 GREEN, 1/2 tsp (per serving) | WW Freestyle: 6 points (per serving)
Groceries:
- 1 -1 1/2lb flank steak (on a budget? This is amazing with lean ground beef, too! Just brown your meat first!)
- Coconut or olive oil
- Honey
- Coconut aminos
- Tomato paste
- Sea salt
- Garlic (2 cloves)
- Fresh ginger
- Gluten free flour (sub arrowroot or tapioca for paleo, or thickener of choice)
- Matchstick carrots and/or thinly sliced red cabbage
- Cilantro and/or green onions for garnish
- Boston or Bibb lettuce
Thursday: 21 Day Fix Instant Pot Chicken Marsala (Stove-Top Option)
21 Day Fix: 1 RED, 1/2 GREEN, 1 tsp (per serving) | WW Freestyle: 6 points for thighs, 4 points for breasts (per serving)
Groceries:
- 1-2 pounds of chicken thighs (or boneless tenderloins if you prefer)
- Butter or ghee
- Olive oil spray
- 8 oz. sliced mushrooms
- 2 shallots
- Garlic (3 cloves)
- Salt
- Pepper
- Garlic powder
- 3/4 cup of Marsala wine
- Chicken stock
- Tapioca starch, corn starch or rice flour (can sub whatever flour/thickener you have on hand)
Tip: My favorite sides to go with this dish are green beans or asparagus and Freezer Friendly Instant Pot Brown Rice!
Friday: Instant Pot Chicken Tortilla Soup {21 Day Fix}
21 Day Fix: 1/2 RED, 1/2 GREEN, 1/2 YELLOW (per serving) | WW Freestyle: 1 point (per serving)
Groceries:
- 1 1/4 lb raw boneless skinless chicken breasts (about 3-4 Breasts)
- 10 oz. diced tomatoes with green chilies
- 14.5 oz. diced tomatoes (no salt added)
- Frozen corn
- 1 can black beans (no salt added)
- 1 medium onion
- 1 jalapeno
- 2 cloves garlic
- 32 oz low sodium chicken broth or stock
- Cumin
- Chili powder
- Himalayan sat
- Black pepper
- 1 pkg organic corn tortillas
- Olive oil cooking spray
- Optional toppings – avocado, cheese, lime, Greek yogurt, cilantro
