A gluten free version of the viral big mac tacos recipe – aka smash burger tacos – with all the flavors of a classic big mac and your favorite burger toppings in taco form. A new spin on taco Tuesday that your whole family will love!
I love tacos. I love burgers. And so this whole big mac smash tacos trend all over social media, nobody needed to twist my arm to try them. I mean, crispy tortillas, melty cheese, and all the big mac topping…I am here for every bit of it.
Because I am gluten free, I was a little unsure how these would turn out for me. I decided to test them with corn tortillas and also with Mission Gluten Free Tortillas. I thought both were yummy, but the Mission Tortillas won it for me! The soft, yet crunchy texture was spot on and we have a new favorite recipe in the rotation. Ingredients + Substitutions
For the Tacos:
- lean ground beef – this also works with lean ground chicken or ground turkey. You could also make a vegan version with your favorite clean meat substitute. It’s important to choose a lean ground meat so you don’t end up with too much grease in your pan.
- garlic powder + salt – my two favorite burger seasonings
- gluten free tortillas – I love the 8 inch Mission brand. If you are not gluten free, you can use whole wheat flour tortillas or regular flour tortillas. Whatever type of tortilla you use, look for around 8 inches for best results.
- American cheese – you can also use dairy free cheese or whatever cheese you have on hand. We also love it with Colby jack.
- thinly sliced or diced red onion or white onion – feel free to omit or use diced white onion like a McDonald’s Big Mac
- dill pickle slices
- shredded romaine or iceberg lettuce, for topping
- avocado oil spray
For the Delicious Big Mac Sauce:
- low fat plain Greek yogurt – use coconut yogurt for dairy free or extra mayo
- naturally sweetened ketchup
- maple syrup
- yellow mustard
- mayo
- pickle juice
- sprinkle of salt, garlic powder, onion powder, and paprika
Step by Step Instructions
Step one: Mix ingredients for sauce in a small bowl or mason jar. Refrigerate until ready to use and prep your other toppings so they are ready to go.
Step two: Divide 1 pound of beef into 4 equal portions and roll them each into a ball.
Step three: Divide the 1 lb of beef into 4 equal portions and roll them each into a ball. Place the ball into the middle of a tortilla and press down. Spread ground meat into a thin layer, covering the tortilla almost to the edge. In my testing, this worked better than smashing the burger during the cooking process. Sprinkle with beef with salt and garlic powder.
Step four: Add 1 tortilla(or more if you can fit depending on the size of the tortilla), beef patty side down, on hot pan and cook for 2-3 minutes or until the meat is browned.
Step five: Flip onto the tortilla side and add a slice of cheese over the meat. Cover and reduce heat to medium-low. Cook for another 1-2 minutes or until the cheese is melted and the tortilla is golden brown. Be careful not to overcook your tacos because the gluten free tortilla gets crispy fast, so keep a close eye.
Step six: Serve with desired toppings and burger sauce.
Recipe FAQs
Yes! I have a Blackstone and I absolutely love it for this recipe! In fact, you could even use a regular indoor griddle. Follow the recipe as written, but you can make all of your tacos at one time if they fit!
Of course! Simply leave off the cheese or substitute vegan cheese. You can make the zesty burger sauce with just mayo or dairy free plain yogurt.
If you are using a standard sized pan and cooking one tortilla at a time, you could place your cooked tacos on a sheet pan in a warm oven while each cooks. You could also just cover them with foil while each taco is cooking.
Need a Side?
These tacos are already filling for me, but my homemade french fries or air fryer sweet potato fries. Or use some extra burger sauce over mixed greens, dill pickles, and tomatoes for an easy and tasty side salad.
Storage + Reheating
If you happen to have leftovers, store tacos in an airtight container or wrap well in foil. Keep it in the refrigerator for up to 2 days. Unused burger sauce should also be refrigerated.
Reheat in a skillet over low heat or in your airfryer at 350 degrees until the taco crisps up and the beef patty and cheese is warmed through.

Ingredients
- avocado oil spray
- 1 lb lean ground beef or other lean ground meat Use 90% lean or higher to prevent too much grease in the pan
- 4 gluten free tortillas Mission brand are my fave, can sub regular flour tortillas if not gluten free
- 4 slices American cheese or your favorite cheese
- 1/4 cup red or white onion thinly sliced or diced
- salt and garlic powder to taste
- 1/4 cup dill pickles for topping
- 1/2 cup shredded romaine or iceberg lettuce for topping
For the sauce:
- ¼ cup plain low fat Greek yogurt
- ¼ cup naturally sweetened ketchup
- 1/2-1 Tbsp maple syrup You can omit
- 2 Tbsp yellow mustard
- 2 tsp mayo
- 1 Tbsp pickle juice
- sprinkle salt, garlic powder, onion powder, and paprika to taste
