Sweet ricotta cream stuffed strawberries are a quick, easy, healthy, and delicious 21 Day Fix sweet treat.
Confession #30 – When I’m on the fix, my days revolve around that darn yellow container. And, actually, the blue one, too.
But the idea of saving yellows for treats is rather, umm, bittersweet?
Sorry for the pun, but it’s true!
And that’s why this sweet treat is SO awesome.
Eat your quinoa, Flatout, or pasta! Spend those yellows!
Because these little beauties are RED and PURPLE! Yay!
I used to make these stuffed strawberries with cream cheese and powdered sugar. I’m not lying- this fixed up version is BETTER! And they are packed with protein and fiber. Weeeeee!!!!
Here’s the recipe for making the sweet ricotta cream stuffed strawberries. Enjoy!
- 1/2 cup strawberries, hollowed out
- 1/3 cup ricotta cheese
- Liquid stevia
- Pure vanilla extract
- Add a few drops of stevia, 1/2 teaspoon of vanilla and a dash of cinnamon to the ricotta cheese and mix.
- Taste and add more stevia or cinnamon as needed.
- Fill the strawberries with the sweetened ricotta.
