Happy Sunday, everyone!
I’m going to keep this short because I am working on several awesome blog projects that I am SO excited about and my early morning time before the littles wake up is nearly coming to an end!
I know they can sense I am up…
It’s like a superpower that they have.
Anyway, my little blog is about to get an amazing new redesign and I am hoping to have it ready for you all ASAP.
But for now, here is a great list of dinners for your week!
Monday: 21 Day Fix One Skillet Lazy Zucchini Lasagna (prep this today! It’s great reheated and then you don’t have to cook on a Monday!)
Groceries:
- olive oil cooking spray (I used my EVO)
- 1 lb lean organic Italian poultry sausage, removed from casing
- 3 cloves of garlic
- 2 med/large zucchini
- fresh spinach
- 1 cup of homemade tomato sauce (or no sugar added jar sauce)
- 1 1/4 cup of ricotta cheese
- 1 egg
- Parmesan cheese
- shredded mozzarella cheese
- fresh ground pepper
- fresh basil
Tuesday: Crock Pot Salsa Lime Chicken {21 Day Fix}
Groceries:
- 1 lb chicken breast
- jar of organic salsa (look for no added sugar and the fewest ingredients)
- 2 limes
Topping ideas: cheese, avocado, cilantro, rice, quinoa, zoodles
Wednesday: Pasta with Broccoli and Chicken Sausage | Carrie Elle
Groceries:
- 1 small head of broccoli
- 1 9oz package of fresh pasta (I used RP’s Gluten Free Fusilli)
- 1 small onion
- 1 package of sweet Italian chicken sausages
- 2 cloves of garlic
- Parmesan cheese
- Fresh parsley or basil
Thursday: 21 Day Fix Honey Glazed Salmon
Groceries:
- 2-4 pieces of wild Alaskan salmon (I love Sockeye from Wegmans)
- juice of one lime
- coconut oil
- coconut aminos (or sub low sodium soy sauce)
- honey
Side dish ideas: rice, quinoa, roasted broccoli, roasted green beans
Friday: Chicken Pad Thai Zoodles {21 Day Fix} (make your OWN take out!)
- boneless chicken breasts
- coconut oil
- 2 eggs
- green onion
- 1 clove garlic
- fresh ginger
- matchstick cut carrots
- 2 large zucchini
- crushed red pepper
- 1 lime
- honey
- coconut aminos (or more to taste/ you could also sub low sodium soy sauce)
- chopped peanuts
- cilantro
