Happy Superbowl Weekend, everyone! I have a feeling this Sunday will be a busy one for most of us, so my meal plan this week consists of easy and quick meals that don’t require a ton of prep and can be made in twenty minutes or less (or simply thrown into the crock pot). So have a blast today, but stay on plan all week long!
Monday: Italian Chicken Skillet (great with pasta or zoodles)
Groceries:
- olive oil
- thinly sliced chicken breasts (1 lb)
- garlic
- 1 can crushed tomatoes
- dried oregano
- dried basil
- crushed red pepper flakes
- shredded mozzarella cheese
- Parmesan cheese
Tuesday: Cheesy Zucchini Mexican Skillet {21 Day Fix}
Groceries:

- extra lean, grass-fed ground sirloin
- onion
- bell pepper
- zucchini
- chili powder
- 1 can of diced tomatoes
- shredded cheddar cheese
Wednesday: 21 Day Fix Sausage, Bean, and Kale Skillet

- 1 package Italian chicken sausage
- kale

- 1 lb of shrimp

- cherry tomatoes
- chicken broth

Friday: 21 Day Fix Salsa Verde Pork {Slow Cooker}
Groceries:
- 1 pork tenderloin (should be enough for 4 servings)
- 1 jar of Salsa Verde (look for one without preservatives and added sugar)
- optional toppings: fresh lime, fresh salsa, avocado, cheese, cilantro, rice, cauliflower rice
